What is cookie dough bread? Well, if you haven’t tried to bake cookie dough in the shape of a loaf, then you are missing out on one of the best ways to enjoy it!
This tastes like a soft and chewy peanut butter cookie. It melts in your mouth! But even better is how good it is for you. Peanut butter is high in healthy fats and protein, and it makes up the bulk of this loaf recipe.
Flourless Cookie Dough
There really isn’t any flour in this dough. It’s crazy to think of, but there isn’t. The combination of baking soda, peanut butter, and eggs creates a fluffy quick bread.
If you wanted to, you could make drop cookies with this dough, or even some l0w-carb dessert bars. It’s a very versatile recipe that you can use in a variety of ways.
Keto Peanut Butter Cookie Loaf
This is the perfect thing to serve at your next brunch. Serve it with some chaffles, bacon, and eggs, and you have a perfect low-carb feast! This cookie loaf also tastes amazing with a keto pumpkin cream cold brew.

Since this has so much protein and healthy fat in it, you can also enjoy a slice after your workout.
It doesn’t need to be refrigerated, but it will last longer if you do. Either store it wrapped in plastic wrap at room temperature for up to 5 days or store it in the refrigerator for up to 2 weeks.

Serve this sweet bread as dessert at your next party. Or bake it in a muffin tin and make individually-portioned muffins that are ready for the party without any extra effort.
I didn’t use any sugar substitute in this loaf. Nope! The peanut butter is sweet enough, and Lily’s sugar-free chocolate chips added just enough sweet tastes to make it perfect.
If you wanted to add a little sweetener to it, then only add a small amount of your favorite liquid or granular sugar substitute. It won’t need much!
Dairy-Free Loaf Cake
Out of the 4 ingredients I used, none of them have dairy! That means it’s not just gluten-free, but dairy-free too.
There are lots of ways you can change this up to make it look and taste different each time too. For example, you could melt some sugar-free white chocolate chips and drizzle it on top of the loaf.
Or dust the top with some confectioner sugar substitute.
The toppings aren’t the only way you can customize it. If you are allergic to peanut butter, you can use a different type of nut butter. Sun butter is made with sunflower seeds so if you use a sugar-free version, it’s the perfect allergy-friendly option.

Keto Cookie Dough Bread Recipe

Ingredients:
4 eggs
¾ cup natural peanut butter
1 teaspoon of baking soda
Lily’s dark chocolate chips
Instructions
1. Preheat oven to 350 degrees F.
2. With a hand mixer, beat eggs and baking soda until frothy/stiff peaks.
3. Add in peanut butter and combine.
4. For the chocolate chips, I add in ¼ cup to the batter and sprinkle a few on top once it is in the loaf pan. You can use more if you want.
5. I used a 5.5 X 3 inch loaf pan and lined it with parchment paper to bake. If you use a bigger loaf pan, keep an eye on the bake time.
6. Start checking on your loaf around 20 minutes.
