The kid’s summer vacation starts in less than four weeks! Since they start school in mid-August, they also end the school year earlier, and it makes Springtime a little more busy than the norm. We also have a graduate this year! Yup, Robert is graduating from middle school and headed to high school!
When it gets this busy, I try to be a bit more flexible with my meal planning. Luckily for me, I’ve already stocked up my freezer with Freschetta® pizza from Publix and plenty of butter lettuce to make this simple butter lettuce salad. Easy Butter Lettuce Salad
Ingredients:
2 heads of butter lettuce
1/2 cup of green olives
1/2 cup of ground pork rinds
3 oz parmesan cheese
Dressing
1/4 cup apple cider vinegar
2 tbsp of olive oil
1 minced garlic cloves
2 tsp of honey
Salt and pepper to taste
Instructions:
Dressing
Combine all ingredients in a bowl and mix. Tip: Dressing also makes a delicious marinade for chicken!
Salad
Chop and arrange butter lettuce in a large bowl or platter. Top butter lettuce salad with parmesan cheese, olives, and top with your favorite croutons or ground pork grind as a low carb option. When ready to serve drizzle with apple cider vinaigrette dressing.
