This is one of my favorite meal prep ideas. I love how it keeps the same flavor and texture even a few days later!
The entire recipe is at the bottom of this post. First, I want to share the main ingredients and any substitutions you can make.
Here’s what I used in my budget-friendly keto fried rice.
- Chicken Breast – Use canned chicken or rotisserie chicken to save time. Other meat options are beef, turkey, or mushrooms.
- Onion – Any type of onion works
- Garlic – Garlic cloves tastes best, but you can use a tablespoon of garlic powder instead
- Ginger – Minced or ground ginger both work well
- Peas – Frozen peas work best, but you can use fresh peas if you have them
- Frozen Cauliflower Rice – This is the easiest ingredient. You can try to make your own cauliflower rice, but it’s time-consuming and just easier to use the frozen bag.
- Sesame Oil
- Eggs
- Coconut Aminos – Soy Sauce can be substituted
- Green Onions
Customize this with your favorite low-carb veggies like broccoli or green beans!
How To Store It
This can easily be made ahead and stored for the week. Here’s how.
If you want to use it for meal prep, store a measured-out amount in a plastic resealable container. It will stay fresh in the refrigerator for up to 5 days.
You can also store it in the freezer. Put it in a freezer-safe bag or container. It will last up to 6 months in the freezer.

My favorite thing about this recipe is that I can make little changes that make it taste like an entirely new recipe. Just by using different veggies and protein, the entire dish tastes differently.
Keto Cauliflower Chicken Fried Rice
Here’s what you’ll need to make this recipe. The exact measurements are located within the printable recipe below. This is going to become your favorite dish for Chinese food nights!
Ingredients
Cooked Chicken cut into bite size chunks
Onion
Garlic
Frozen cauliflower rice
Ginger, minced or ground
Carrot – optional
Frozen peas
Toasted sesame oil
Eggs
Coconut aminos or soy sauce
Green onions
Directions
Heat 2 tbsp of oil in a skillet on medium heat.
Add chicken and cook until no longer pink. Set aside.
Add remaining oil to skillet. Add onion, garlic, carrots, peas and ginger. Cook for 5 minutes or until vegetables are soft.
Push to the side and add in eggs, Stir and cook eggs through.
Add frozen cauliflower rice and chicken to skillet and cook until liquid has evaporated and chicken is heated through.
Top cauliflower fried rice with coconut aminos and stir. Garnish with green onions.
To give your fried rice a kick add a pinch of red pepper flakes or drizzle with hot sauce!

Ingredients
- 1 lb chicken breast cut into bite size chunks
- 1 small finely chopped onion
- 1 garlic clove, minced
- 2 cups fresh or frozen cauliflower rice
- 1 tbsp ginger, minced or ground
- 1/4 cup carrot, diced (optional)
- 2 tbsp toasted sesame oil
- 4 eggs
- 3 tbsp coconut aminos or soy sauce
- 3 green onions finely chopped
Instructions
