The recipe spread from the message board where she posted it. Bloggers kept making their own versions and today it’s called cloud bread!
I took the original oopsie bread recipe and added bacon, cheese, and jalapenos. The result is a slightly-spicy bread that is the perfect snack when you are craving something savory.

Yes, cloud bread and oopsie bread are basically the same things. I’ve made keto cloud bread before. It’s one of my favorite ways to eat sandwiches on the keto diet.
It’s also the perfect thing to pack in a lunch, with some deli meat and cheese, for a portable and filling lunch.
For something with more flavor, try this keto rosemary cloud bread. I like to serve the rosemary version with chicken or steak. Rosemary is a fresh herb with slightly sweet undertones. I like to pair it with salty and savory main courses.
Bacon Cheese and Jalapeno Quick Bread
The crispy bacon and spicy jalapeno are a match made in culinary heaven! There are a lot of ways to change this recipe so that it tastes just how you want it to.
Do you want it to taste spicier? Add more jalapenos. Do you want it to be kid-friendly? To make it extra mild, leave the jalapenos out and just make bacon and cheese cloud bread.
How Long Does Cloud Bread Last
If you keep it in an airtight container in the refrigerator, homemade cloud bread will last one week. I will tell you that the cloud bread’s texture is the best when it is within 12 hours of baking it.
Can You Freeze Cloud Bread
Yes, you can freeze cloud bread too. In fact, this is the best way to make it last even longer. Frozen cloud bread will stay fresh in the freezer for up to six months.
To freeze it, let it cool completely. Then, wrap each piece of oopsie bread individually in plastic food storage wrap. Place all of the wrapped pieces of cloud bread in a resealable freezer-safe food storage and put it in the freezer.

Egg Whites
Cream cheese
Garlic powder
Cream of tartar
Egg yolks
Shredded cheddar cheese
Crumbled bacon pieces
Sliced jalapenos
Salt
Instructions:
Preheat oven to 350 degrees.
In a mixing bowl add the egg whites and cream of tartar until it forms stiff peaks. Blend together.
In a separate bowl, beat together the cream cheese, egg yolks, garlic powder and salt until smooth.
Fold the cheese and egg white mixture into the cream cheese mixture until well combined.
Drop the mixture into eight circles on a parchment lined baking sheet.
Top each circle with bacon pieces and two jalapeno slices.
Bake for 20 minutes.

- 1/2 tsp Cream of Tarter
- 2 Egg Yolks
- 1/4 cup Shredded Cheddar Cheese
- 1/4 cup Crumbled Bacon Pieces
- 1/4 cup Jalapeno Slices
