Cheesy and tasty, this keto baked brie mummy tastes like the ultimate fried mozzarella stick. It’s a fun Halloween snack or appetizer.

Is Brie Cheese Keto 

Yes, brie cheese is a fantastic food to eat on the keto diet. There are 8 grams of fat and 0.1 grams net carbs per ounce. If you need a healthy fat boost, you will find it in brie cheese. 

Keto Baked Brie Mummy

This might not be a good cheese for you if you are lactose-intolerant. Brie cheese is a soft cheese that has a white rind. This rind is often difficult to chew and is actually made from natural mold growth.

The rind is completely safe to eat. In fact, it is considered to be a delicacy. 

Keto Baked Brie

Most baked brie recipes involve wrapping the brie inside a flaky pie crust, almost like a cheesy hot pocket. I used my favorite fathead dough recipe to make this a keto-friendly recipe.

Keto Baked Brie Mummy

Fathead dough is a combination of melted mozzarella cheese, cream cheese, egg, and almond flour. The amounts of each ingredient vary, depending on how flaky or dense you want the crust or bread to be. 

I used this fathead dough recipe to make keto Hawaiian rolls and the top crust of keto Italian sub casserole. This recipe is perfectly flaky and make the baked brie extra delicious. 

Mummy Baked Brie 

This mummy baked brie recipe takes a bit of set-up, but it is worth every step. You’ll need to roll out the dough and cut it into strips and then wrap the strips around the brie cheese before you bake it.

Keto Baked Brie Mummy

This is a sticky dough, so place the dough between two sheets of parchment paper before you try to roll it out with a rolling pin. You can cut the strips of dough with a knife, but I found it was a lot easier to cut it with a pizza cutter.

Halloween Brie 

This is a really fun recipe to make with your kiddos! They will have a blast wrapping the cheese with the strips of dough. Turn some mini pepperoni slices and olives into the mummy’s eyes. 

Keto Baked Brie Mummy

The brie has so much flavor that you don’t even need a dipping sauce. My kids love dipping things, so I gave them some sugar-free marinara sauce. The mummies are a blast to eat up! 

Halloween Appetizer 

Make a few different keto baked brie mummies if you are hosting a Halloween party. They are so cute and not at all spooky, so they are perfect to share at parties for kids.

Since baked brie tastes the best when it is hot and melted, I don’t suggest trying to make it ahead of time. You could assemble the mummy with the raw dough, cover it in an airtight container, and then bake it right before the party, to save yourself a bit of time. 

Keto Baked Brie Mummy Recipe

Below are the ingredients that you’ll need to make this spooky and fun keto baked brie mummy. Exact measurements and instructions are located in the printable recipe card just a little bit further below.

Cook Time: 20-25 minutes
Servings: 8
Net Carbs: 2 net carbs per serving

Ingredients:

Brie wheel of cheese
Slices of mini pepperoni
Black olives
Mozzarella cheese shredded
Cream cheese
Almond flour
Xanthan gum
Garlic powder
Baking powder
Egg white
Salt

Instructions:

Place the mozzarella and cream cheese into a microwave safe bowl. Heat the mixture for 30 seconds at a time until well blended and smooth.

Add cheese dough to mixing bowl with almond flour, xanthan gum, garlic powder, baking powder, egg white and salt. Blend until a smooth dough has formed.

Keto Baked Brie Mummy
Chill the dough for 30 minutes.
Preheat the oven to 350 degrees.
Roll the dough out to about ¼ of an inch thick between two pieces of parchment paper.

Use a pizza cutter to cut strips from the dough.
Wrap strips of dough around the brie cheese to create the mummy design. Bake for 20-25 minutes until the brie has melted.

Cut two slices of black olive, and place them over the pepperoni on the front of the brie mummy.

  • 2 Black Olives
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Almond Flour
  • 1 ounce Cream Cheese
  • 1/4 tps Xanthan Gum
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Baking Powder
  • 1 Egg White
  • 1 pinch Salt
