Casseroles are fantastic family meals. They are relatively inexpensive and feed everyone. Plus, this casserole has meat, cheese, and veggies – it’s an entire meal in one dish.
You might be surprised that there are only 5 grams net carbs in each serving! There are ways to decrease these net carbs too, if you want. Every bite is full of protein, healthy fats, fiber, and nutrients.
This is a wonderful way to use tomatoes and peppers from your garden.
Italian Sub Casserole
The topping on this casserole is the best part. I used my tried and true fathead dough recipe, combining mozzarella cheese, cream cheese, almond flour, egg, and baking powder. It’s the same dough recipe I used to make my popular keto garlic knots.
Season this dough with Italian spices. I used jarred Italian seasoning and garlic powder. For a sweeter flavor, add some fresh basil.
The bread-like topping really makes this tastes just like an Italian sub sandwich. It’s incredible!
Italian Casserole
This Italian casserole is basically an entire meal in one dish. If you want to add a few things on the side, consider adding your favorite chopped salad. This Olive Garden salad has many similar flavors.
If you really love peppers, add some stuffed peppers on the side. Or make some fluffy cauliflower mash to your plate. It’s a crowd pleaser with almost any meal you make.
Low-Carb Italian Casserole

Instead of provolone cheese, use swiss cheese for a tangy twist. If you want to add some heat, chop up some jalapeno peppers and add them to the casserole. You can also add white or yellow onions instead of red onions.
How To Store Casseroles
The best way to store casseroles is in an airtight container in the refrigerator. This casserole will stay fresh for up to three days. I suggest eating it before three days so the bread-like topping doesn’t soften too much.
Reheat this casserole in the air fryer or oven to keep it nice and crispy.

Ingredients:
For the casserole:
Deli sliced ham
Deli sliced pepperoni
Deli sliced salami
Slices provolone cheese
Red onion
Sliced pepperoncini peppers
Green bell pepper
Roma tomatoes
Olive oil
Red wine vinegar
Italian seasoning
For the topping:
Mozzarella cheese shredded
Cream cheese
Almond flour
Egg
Baking powder
Xanthan gum
Garlic powder
Italian seasoning
Salt
Instructions:
Preheat the oven to 350 degrees.
Place the mozzarella and cream cheese into a bowl that is microwave safe. Heat for 30 seconds at a time until the cheese is melted and well combined.
Place the melted cheese into a mixing bowl with the remaining ingredients for the topping. Blend until well combined into a dough.
Layer the ham, then salami and finally the pepperoni in a 9×13 baking dish.
Top the meat with the sliced tomatoes.
Add the bell peppers, onion and pepperoncini peppers.
Sprinkle with the Italian seasoning. Mix together the oil and vinegar in a bowl, and pour it over the casserole.
Layer the cheese slices on the top.
Roll the dough out between two pieces of parchment paper until it is roughly the size of the casserole dish.
Place the crust on top of the casserole, trimming the edges if needed.
Bake for 25-30 minutes until the dough is cooked through, and slightly browned.
