This is one of those recipes that you can fry up in a skillet in just a few minutes and then eat immediately! It’s faster than waiting for takeout to arrive and tastes a lot better, too!
Since this is such a simple recipe, there is a lot of room for creativity. Make it as spicy or as mild as you like it.
You can also change up the veggies that you add to it, too! Just be aware that every vegetable you add to the stir fry will increase how many carbs it has.
If you follow my recipe exactly, it will make five servings and each serving has 5 grams net carbs.
Keto Beef Burrito Bowl
There are so many different things you could call this meal. I like burrito bowl because it reminds me of Chipotle! But you can also call it an unstuffed burrito or open-faced burrito.
I cut up the keto street taco tortillas and added them to the skillet. This gives the skillet an incredible texture! But if you wanted, you could add the ground beef mixture to the tortillas and eat them like beef street tacos.
Easy Mexican Skillet Recipe
This meal comes together in a snap! But there are a few ways that you can make it even quicker. To speed up the dinner prep, store your veggies pre-chopped and brown the ground beef ahead of time.
Then, all you have to do is add it all to the skillet, add your spices, and fry it all together.
Since this is such an easy skillet recipe, I don’t recommend trying to make it in the Instant Pot or air fryer. It only needs to cook for about 20 minutes on the stove.
Sides For Burrito Bowls
Since this skillet meal is made with beef, cauliflower rice, and veggies, you don’t need to add much to the table to make it a full meal.
If you want to jazz up the cauliflower rice a bit, make some keto Mexican street cauliflower or keto cauliflower cilantro lime rice. Both are popular options for Mexican food.
Or really jazz up the flavors and make keto aguachile. It’s a refreshing salad that has lots of amazing ingredients. Then for dessert, make some keto churros. Everyone loves them.
Best Meat For Burrito Bowl
I used ground beef because it’s really easy to find and most everyone loves a beef burrito! But you can use any type of ground meat that you want. Try this with chorizo, ground turkey, or ground chicken.
If you use a leaner meat like chicken or turkey, you might have to add more spices. A little more cayenne pepper and paprika will make the burrito bowl taste incredible!

Ingredients
- Ground Beef
- Onion
- Red and Green Bell Peppers
- Minced Garlic
- Chili Powder
- Cumin
- Paprika
- Cayenne Pepper
- Cauliflower Rice
- Rotel Tomatoes
- Fiesta Blend Shredded Cheese
- Zer0-Carb Street Taco Tortillas
Directions
Add the ground beef, onions and peppers to a large skillet over medium high heat. Saute until the meat is browned and vegetables have softened. Drain the excess fat.
Reduce the heat to medium, and add in the garlic, chili powder, cumin, paprika, cayenne and salt and pepper to taste. Saute 1 minute longer.
Mix in the cauliflower rice and Rotel. Saute for 2 minutes.
Stir in the tortilla strips.
Sprinkle the cheese on top, turn the heat off, and allow the cheese to melt before serving.

- 1/2 Red Bell Pepper chopped

- Cayenne Pepper to taste
- 1 1/2 cups Cauliflower Rice
- 1/2 cup Rotel drained
- 1 cup Fiesta Blend Shredded Cheese
- Salt and Pepper to taste
- 5 Zero Carb Street Taco Tortillas cut into strips
