They taste the best when they are fresh out of the oven. The melted cheese stretches in long lines as you bite into it. The taco seasoning and RoTel tomatoes add even more heat and spice to the peppers too.
Ground Beef Stuffed Poblano Peppers
The stuffed poblano peppers taste delicious when you fry up ground beef. You can use any type of ground meat that you like. Try them with ground turkey, chicken, or even pork. Fill them with chorizo or spicy sausage for even more heat!
If you use a different type of ground meat, I suggest adding a bit more salt and pepper. Ground turkey and ground chicken have less flavor than ground beef.
It takes about 30 minutes for these to bake in the oven. You can make them in the air fryer too. Air fry them at 350F for about 15 minutes without the stuffing and then another 10 minutes with the stuffing in them.

Keep cooked poblano peppers in an airtight food storage container and keep it in the refrigerator for up to three days. Reheat them in the oven or air fryer in order for them to stay crispy.
Poblano Peppers vs Jalapeno
There are a lot of differences between poblano and jalapeno peppers. Poblano peppers are larger than jalapenos. In fact, they are often twice as large as jalapenos.
There are also a lot of differences in how they taste. Poblanos have a smokey flavor and aren’t as spicy as jalapenos. The smaller peppers – jalapenos – taste grassier and brighter.
If you want something that has heat without a lot of spice, I suggest using poblano peppers.

Ingredients:
Poblano peppers
Red bell pepper
Ground beef
Minced garlic
Taco seasoning
Rotel drained
Shredded colby jack cheese
Cilantro for garnish
Instructions:
Slice the poblanos in half lengthwise, and deseed them well.
Place the peppers cut side up into a 9×13 baking dish, and bake in a 350 degrees preheated oven for 15 minutes.
Add the ground beef and red bell pepper to a skillet over medium high heat, and saute until the meat is browned and the pepper has softened. Drain the extra fat.
Reduce the heat to low, and stir in the garlic, taco seasoning and Rotel. Stir to combine, and saute for another minute.
Fill the peppers with the meat mixture, and top with the cheese.
Bake for an additional 10-15 minutes.
Garnish with cilantro before serving.
