Candy canes are synonymous with winter and Christmas! My kids love to hang them on the Christmas tree and use them as stirring sticks in their hot chocolate.

Keto Peppermint Cheesecake
There are two parts to this tasty cheesecake – the gluten-free crust and the peppermint cheesecake filling. The gluten-free cheesecake crust is made with almond flour and sweetened with Swerve confectioner’s sugar substitute.
Since peppermint and chocolate go perfectly together, I added cocoa powder to the crust. The result is a cheesecake that reminds me of peppermint patties.
It’s incredibly delicious.
Keto Candy Canes
You’ll use the peppermint candies on top of the cheesecake. They add a crunchy texture and do a wonderful job of showing the flavors of the cheesecake off.
You can either crush up keto candy canes or some sugar-free peppermint candies. Use what you can find.
The combination of peppermint and chocolate is irresistible! Use these two flavors together to make keto chocolate peppermint cupcakes.
They are perfect for parties or just a fun dessert. Or make some keto white chocolate peppermint bark. It’s the perfect thing to hand out as homemade food gifts.
Christmas Cheesecake
This is the perfect cheesecake to make ahead and serve on Christmas morning, or at holiday parties. If you want to make it ahead of time, store it in an airtight food storage container and keep it in the refrigerator for up to three days.
It’s also really easy to freeze the cheesecake. It will stay fresh in the freezer for 6 months. To freeze the cheesecake, place it unwrapped in the freezer for an hour or so; just long enough to freeze the outside of the cheesecake.
Then, wrap it up completely with plastic food storage wrap. Keep it in the pie plate and wrap it tightly to keep the air off of it.
Then, when you’re ready to eat it again, let it thaw out in the refrigerator until you can slice into it.

For the crust:
Almond flour
Melted butter
Cream cheese softened
Swerve confectioners sugar substitute
Cocoa powder unsweetened
For the filling:
Cream cheese softened
Plain Greek yogurt
Swerve confectioners sugar substitute
Peppermint extract
Heavy whipping cream
Boiling water
Plain gelatin powder
Sugar free peppermint candies crushed
Instructions:
Blend together all of the ingredients for the crust until well combined, and press into a well greased pie plate.
In a mixing bowl, stir together the boiling water and gelatin powder, and let sit for 5 minutes.
Place the heavy whipping cream into a mixing bowl, and beat until it forms stiff peaks.
Add the cream cheese, Greek yogurt, Swerve and peppermint extract into the mixing bowl with the gelatin, and beat until smooth and creamy.
Fold the heavy whipping cream into the cream cheese mixture until well combined.
Smooth the mixture over the crust.
Sprinkle the crushed candies over the top of the pie.
Chill the pie for at least 4 hours before serving.
