Yes, strawberries are one of the best types of fruit you can eat on the keto diet. They are high in fiber and low in carbs. In one cup of chopped strawberries, there are 3 grams of fiber and 8.7 grams of net carbs.

To keep the carb-count low in these pies, I used sugar-free strawberry Jell-O as the main ingredient and used fresh strawberries as one of the minor ingredients. It worked because each pie only has 4 grams of net carbs.

You can store this pie in the refrigerator or even freeze it to make it last even longer. To store it in the refrigerator, cover it completely with an airtight lid, aluminum foil, or plastic food wrap. Basically, keep the air off of it.

Keep it in the refrigerator for up to three days. 

To freeze the pie, wrap it up completely in aluminum foil and then place it in a freezer-safe food storage bag. The pie will last up to six months in the freezer.

Ingredients:

Almond flour
Butter 
Swerve confectioners sugar substitute 
Vanilla extract
Sugar free strawberry Jello packet
Strawberries
Water

Instructions:

Preheat the oven to 350 degrees.

In a mixing bowl, combine the almond flour, butter, 3 Tbsp of the Swerve sugar substitute and the vanilla. Mix until a crumbly mixture has formed.

Press the crust mixture into two well greased mini pie tins.

Bake for 15 minutes, or until browned. Let cool to room temperature.

  • 4 Strawberries sliced
  • 1/3 cup Water

Instructions
