Low-Carb Homemade Snack Mix
Inspiration comes in many ways. For this snack mix, it came to me when I was shopping in Costco. I saw a keto snack mix with parmesan crisps and knew I could make the same thing at home.
This recipe tastes just like the bagged mix from Costco. The biggest benefit of making it at home is that you can control exactly how it tastes. If you don’t like some of the nuts or you want it to have more parmesan cheese, you can control everything!
Low-Carb Snack Mix
You can enjoy snacks while you are on the keto diet, you just have to track your macros. This snack mix is wonderfully low in carbs, so it fits perfectly within a keto diet. Since I used a variety of different nuts in it, this is also a high-protein snack.
It’s the perfect thing to eat after a hard workout because the proteins work to repair your muscles.
Keep a small bag of this snack mix in your gym bag and munch on some after your spin class. It’s portable and easy to take when you leave the house. I like to add this to my meal prep plans as one of my favorite snacks!
Best Low-Carb Nuts
One of the main ingredients in this snack mix is mixed nuts. Feel free to use your favorite type of nuts, but be aware that some types have more carbs than others. Cashews have the most carbs – 22g carbs in one serving. Compare that to 9g of carbs in almonds and 7g of carbs in walnuts.
Pecans have the least amount of carbs, with only 4g net carbs per serving.
I used cashews, but only 1 cup in the entire snack mix. This means that you only end up eating a few cashews in each serving. If you want to decrease the carbs in this mix, you can replace the cashews with pecans or even chopped Brazil nuts.
Slow Cooker Party Snack Mix
This makes a fantastic gift, too. Add the parmesan snack mix to a decorative tin and give it to teachers or family members.
Since this is a slow cooker recipe, it’s an easy snack to prepare for parties. You can either serve it hot or let it cool to room temperature. Place it in a decorative bowl and set it out for your guests. Or, fill individual snack bags for your guests to hold and enjoy during the party.
After you make it, store it in an airtight container. Since it has fresh parmesan cheese in it, I suggest storing it in the refrigerator. It will stay fresh for up to a week.
Keto Parmesan Crisps
I used fresh parmesan cheese in this recipe. As it cools, it hardens and becomes nice and crispy with an unmistakable salty taste. If you want to add a bit more flavor and crunch, you can add more store-bought parmesan crisps.
They resemble croutons, with the same crunch salty flavor.
Slow Cooker Low-Carb Snack Mix Recipe

Yield: about 4 cups
Roasted cashews
Roasted pistachios
Roasted almonds
Egg, white
Parsley flakes
Italian seasoning
Garlic powder
Cayenne pepper
Salt
Grated parmesan cheese
Parmesan cheese crisps
Optional: 2 tablespoons water
1. Prepare the slow cooker liner by spritzing with nonstick cooking spray.
2. In a large bowl, combine the nuts.
3. In a small bowl, beat the egg white until frothy. Pour over the nuts and toss to coat.
4. Add the seasonings to the nuts and toss until evenly coated.
5. Place the nuts in the slow cooker, cover, and cook on high for 1 ½ hour, stirring every 15 minutes.
6. Toss the nuts with grated Parmesan cheese and transfer to a rimmed baking sheet covered with parchment or waxed paper. Allow cooling completely.
7. Add the cheese crisps to the nuts and toss to evenly distribute.
8. Store the snack mix in an airtight container for up to 2 weeks.
