This keto zucchini bake is packed with cheese and chicken and is a super easy meal that you can make ahead and keep in the freezer.
Keto Zucchini Bake
Whenever I make a casserole and fill it with tons of cheese, my kids and family love it! This recipe is very cheesy. Not only does it have mozzarella cheese, but I also added parmesan and heavy whipping cream. The sauce is incredibly rich and it helps the cheese all melt perfectly.
Here is another tip that you will appreciate. If you don’t have a food processor, get one! It will make slicing your zucchini a breeze. Plus, it slices the zucchini evenly. If you try to slice the zucchini by hand, some pieces might be thicker than others, which will make them cook unevenly.
Chicken Zucchini Bake Keto
I think chicken breast is the best-tasting meat for this casserole. It is mild enough to not overpower the creamy sauce. You could also chop up boneless skinless chicken thighs instead.
I think pork loin would taste really good in it, but I can’t see pork chops working out as well.
Of course, if you really want to save time, just add a few cans of chicken instead of chopping up chicken breasts!
The chicken isn’t the only thing you can swap out – try using different types of vegetables too. Add some cauliflower, yellow squash, or asparagus tips to the casserole. You can even sprinkle some bacon on top.
Keto Chicken Casserole
I love casseroles because they are a one-dish meal. It saves me time cleaning up! It is possible to make this recipe in the slow cooker as well. The vegetables might be softer, so keep that in mind.
Cook this casserole on low for 6-8 hours or on high for 4-6 hours.
How To Freeze a Zucchini Casserole
This is an excellent casserole to make ahead and store in the freezer. Then, you’ll have a freezer meal that all you have to do is put in your oven and dinner is ready!
I love recipes like this!
To freeze it, bake it first according to my recipe’s instructions. Then, let it cool off completely. Next, seal it completely in a freezer-safe food storage container that has a lid. Keep it in the freezer for up to 6 months.
When you are ready to eat it again, just put it in a 350F oven for 30-45 minutes, or until it is hot in the middle.
