This recipe is extremely cheesy. Two different kinds of cheese melt together to make a rich sauce over the fresh green beans. Then, it’s topped with crunchy pork rind crumbs and some crispy bacon pieces. what can be better than this?

Green beans are a high-fiber, low-carb vegetable that you can eat guilt-free. There are only about 5 grams net carbs in a cup of green beans, so you can fill up your plate and still stay within your macros.
I love finding new ways to use green beans. One of my favorite (and easiest) ways to prepare them is by sauteing them. Just add a little butter and garlic to the pan and you will have a delicious side dish.
You can also top these green beans with a fried egg. Another one of my favorite green bean recipes will always be green beans and sausage skillet. It’s hearty enough to be an entire lunch or dinner idea.
Best Ever Green Bean Casserole
This recipe is perfect for both meal prep and holiday dinners.
If you want to use it for meal prep, store it in an airtight container in the refrigerator without the pork rind topping. The cheese mixture will harden as it chills. Before you eat it, heat it back up either in a skillet or in the microwave, and then add the pork rind crumbs on top. If you try to refrigerate it with the pork rind crumbs, they will soak up the cheesy sauce and become quite soggy (not pleasant).
Even though I called this recipe jalapeno popper casserole if you don’t like how spicy jalapenos are you can just leave them out. It will still be a really cheesy and tasty green bean casserole without the peppers.

Ingredients:
Fresh green beans
Sliced mushrooms
Cream cheese
Heavy whipping cream
Bacon pieces
Cheddar cheese shredded
Jalapeno pepper
Butter unsalted
Pork rind crumbs
Parmesan cheese
Instructions:
Blanche the prepared green beans in boiling water until crisp tender. Rinse immediately in cold water and drain.
While the beans are cooking, melt the butter in a saucepan over medium heat on the stove.
Add the mushrooms to the saucepan and saute until tender.
Place the cream cheese, jalapeno, heavy whipping cream and salt and pepper to taste to the saucepan with the mushrooms, and whisk until the cream cheese is melted and combined.
Mix the bacon pieces and cheddar cheese into the sauce mixture and stir until the cheese is melted.
Pour the mixture over the green beans, and stir to combine.
Layer the green bean mixture in the bottom of a 9×13 baking dish.
Mix together the pork rind crumbs and parmesan cheese together in a food processor, and sprinkle over the green bean casserole.
Bake for 20-25 minutes.
