Tender, juicy shrimp in a creamy dill sauce – this keto shrimp salad is the perfect cold lunch when you are craving something light.
Creamy Shrimp Salad
This salad will break you out of your salad boredom. It isn’t a normal chopped salad with the same vinegar-based dressing. This is a light shrimp salad covered in a tangy mayo and sour cream dressing that is freshened up with an almost sweet herb flavor, thanks to the dill and chives.
It also has the best textures! The tender, juicy shrimp are covered in a creamy dressing and combined with crunchy bell peppers and celery. Every bite is a new experience, and it’s as good for you as it is fun to eat.
Keto Shrimp Salad
You can either use fresh or frozen shrimp, just make sure it is completely cooked, peeled, deveined, and the tails are removed before you add it to your salad. For this reason, I like to get some cocktail shrimp, remove the tails, and add them to my salad.
Deveining and peeling shrimp is a time-consuming thing, but fresh shrimp also has this amazing flavor. Do what works for your schedule and time.
Since this salad covers fresh, raw veggies in a creamy sauce, I suggest storing leftovers in an airtight container in the refrigerator for only up to three days. If you try to keep it for longer than three days, the vegetables will soften as they soak up the liquid from the dressing.
Keto Seafood Salad
The cooked shrimp has the perfect light taste that goes really well with all the flavors in this salad. If you don’t have shrimp, there are other options you can use in this salad instead.
Make it with some cooked chicken breast pieces instead. You can even save time and use either canned chicken or canned tuna. This salad would also taste really fantastic with some chopped cooked salmon too!
Keto Shrimp Lettuce Wraps
After you make the salad, just dig into it with a fork. I like to store it in my meal-prep containers and eat it for lunch the next day. For something different, eat it on top of your favorite keto bread or some lettuce wraps.
What To Eat With Shrimp
I like to eat some raw veggies with this salad because it’s such a light meal. If you are craving bread, make some keto dinner rolls and eat them on the side with this salad.
Before the keto diet, I used to love eating rice with shrimp, so now I just make a plate of cauliflower rice to eat on the side. For something crunchy and salty, make keto bacon wrapped cabbage. It’s really high in fiber and fat and will satiate your salty cravings.
