These keto egg roll meatballs recipe is low-carb and make the perfect high-protein snack. They also make fun appetizers for parties!

Keto Egg Roll Meatballs Recipe

These meatballs taste just like the inside of an egg roll! The crunchy coleslaw mix with the spicy ginger paste, all covered with some crispy pork rinds. The result is as delicious as it is beautiful!

If you are looking for a low-carb snack that will fill you up or something to make for a party that you can eat without guilt, these egg roll meatballs are perfect! In fact, the pork rind crust makes them taste – and feel – just like real egg rolls!

Best Type of Meat To Use

I used ground beef. You can swap the beef for ground pork, ground chicken, or even ground turkey. They will all taste delicious with this recipe.

These meatball egg rolls have a delightful bite! If you want to make them spicier, add more red pepper flakes or a little more ginger paste. If you want to make them milder then decrease how much ginger paste you use.

There are only 2 grams of net carbs in each serving; one serving is 6 meatballs. This recipe makes 30 meatballs total.

Meatballs are so easy to make keto-friendly. You can often just swap bread crumbs in a recipe for almond flour. After that, there are a bunch of different varieties and ways you can make the meatballs. In this recipe, I basically made them taste just like egg rolls.

Easy Egg Roll Meatballs

Ingredients:

  • Ground beef or pork
  • Coleslaw mix
  • Green onions chopped
  • Minced garlic
  • Eggs
  • Ginger paste
  • Soy sauce
  • Pork rind crumbs

Instructions:

Preheat the oven to 400 degrees.

In a large mixing bowl, combine all of the ingredients and knead together with your hands until well incorporated.

Form the mixture into 30 evenly sized meatballs, and place them on a baking rack that has been placed on top of a baking sheet.

Bake for 20 minutes, or until browned and cooked through completely.

  • 2 cups coleslaw mix
  • 2 tsp minced garlic
  • 1 egg
  • 2 tsp ginger paste
  • 3 tbsp soy sauce
  • 1 cup pork rind crumbs
