Keto Green Bean Casserole
I would never have thought of myself as someone who would make a green bean casserole from scratch, or a low carb one at that! In fact, I use to make the easy traditional recipe that was made with a can of mushroom soup and french fried onion s and a can of green beans.
That classic recipe obviously doesn’t work for someone on a low carb diet, so I decided to make this low carb version that everyone equally loves.
What’s ingredients are in this keto green bean casserole?
This keto green bean casserole is made with fresh green beans, mushrooms, and a crunchy topping made from a mixture of bacon and pork rind. The star in this Keto recipe is the creamy flavorful sauce that is made with heavy cream, almond milk, and cream cheese.
This skillet green bean casserole is so delicious everyone in your family – even the ones that love their carbs – will dig in and ask for seconds. I suggest making a double portion if you are going to share it with lots of family members.

Can you eat green beans on the Keto diet?
You bet! Green beans are part of the legumes family but are much lower in carbs (1 cup of greens has 10 grams of total carbs, of which 4 are fiber).
If you are on a strict keto diet, I always recommend tracking your carbs and fat. This recipe has quite a bit of fat from the heavy cream and the pork rinds. It’s all healthy fats, so it’s good for you.
How to Store Low-Carb Green Bean Skillet Side Dish
This recipe tastes the best when it is hot off the stove. If you have any leftovers, you can store them in the refrigerator in a sealed container. Just understand that when you go to reheat it, the pork rinds will soak up the heavy cream and it won’t have the same crunch.
I do not recommend freezing it. This is such a quick and easy recipe that you don’t need to make it ahead of time. If you want to save yourself time, fry the bacon ahead of time and store it in your refrigerator. Otherwise, the entire recipe just involves making the creamy sauce, sauteeing the mushrooms, and letting it all cook together with the crushed pork rinds on top.

What’s In Keto Green Bean Casserole
I used low-carb fresh ingredients that taste just like your classic green bean casserole.
- Fresh green beans
- Sliced mushrooms
- Diced onions
- Half & half cream
- Almond milk
- Cream cheese
- Salt
- Pepper
- Pork rinds
- Bacon
Step By Step Photos
Making the keto green bean casserole with cream cheese is easy!
First, crush up the pork rinds and then add them to a bowl. Then, fry the bacon until it is crispy and transfer to a paper toweled plate. Before you clean up, reserve 2-3 tbsp of bacon grease. You will use it later.
Chop bacon into small pieces.
Add the bacon into the bowl along with pork rinds and stir. Set this bowl aside.
Next, add green beans to a pot of boiling salted water. Cook for about 5-8 minutes. This is about how long it takes for the green beans to soften just slightly. You want them to still have a minor crunch to them. Drain the water and pat them dry.
Add some of that bacon grease you kept to a pan and cook the mushrooms and onions in the grease until they are brown.
In the same pot add in some cream cheese, half and half and almond milk. Bring this pan to a boil and reduce heat and simmer for about 5-8 minutes or until the sauce has thickened.
Now add greens beans into the sauce mixture. Stir it and add to a large pan and cook for about 15-20 minutes.
Sprinkle with bacon and pork grinds and bake until edges are golden brown and bubbling!
You are going to smell this as it cooks, it smells divine!

Ingredients
- 1 pound green beans
- 2 cups mushrooms sliced
- 1 cup onion diced
- 2/3 half & half cream
- 1/2 cup almond milk
- 1/4 cup cream cheese
- 1 tsp salt
- 1 tsp pepper
- 1/3 cup crushed pork rinds
- 1/3 cup cooked bacon
Instructions

Preheat oven to 350 degrees
In bowl add crushed pork rinds.
