Pancakes and waffles are two breakfast staples that everyone loves! On weekends we go all out and make waffles from scratch and it’s important for me not to miss out. This fluffy Keto lemon poppyseed waffle recipe is one the whole family can enjoy and still keep me on track. A major win-win for me!

How To Freeze Waffles
Make your waffles following the instructions below.
Allow waffles to completely cool down.
Place waffles on a cookie sheet and freeze.
When waffles are frozen place them in freezer bags (my preferred way) or containers.
Pop in the toaster when you’re ready to eat!
My kids love to add traditional toppings to their waffles but these poppyseed waffles taste amazing with butter and a dash of cinnamon or even on their own!

Keto Lemon Poppyseed Waffles
Servings: 6
Serving size: 1 waffle
Prep time: 5 minutes
Cook time: 10 minutes
Total time: 15 minutes
Ingredients
80 g almond flour (1 ½ cups)
1 tsp stevia extract, powder
1 tsp baking powder
Pinch of salt
1 large egg
¼ cup coconut oil, melted
2 tbsp lemon juice
½ cup unsweetened almond milk
1 tsp vanilla extract
15 g poppyseeds (2 tbsps)
Instructions:
In a medium bowl add the dry ingredients and whisk (almond flour, stevia, baking powder, and salt) leave aside.
In a separate bowl add eggs and whisk with the whisker until foamy, add the coconut oil, lemon juice, and almond milk, continue whisking until well combined.
Add the dry ingredients to the wet and stir, lastly add the vanilla extract and poppyseeds, whisk and let it rest for two minutes.
Preheat the waffle iron, Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.
