I love using my microwave to cook. It’s just so fast and convenient. When I get a craving, I can indulge in something sweet in a few minutes or less, Isn’t it great? I’ve used the microwave to make keto pancake in a mug and, my favorite, keto French toast.
If you have a ramekin or a coffee mug, then you can make some of the best-tasting low-carb brownies you have ever tried!
Microwave Brownie
This is a very simple recipe with just 7 little ingredients. It’s mostly made with almond flour, cocoa powder, and pumpkin puree.
When it is finished baking in the microwave, it is the perfect texture – spongy with a rich and fudgy center. Plus the pumpkin pie spice makes it smell like a pumpkin spice mocha!
Surprisingly, the entire brownie only has 3g net carbs in it! Whenever I’m craving chocolate and want something really quickly, I whip this up!
Keto Microwave Brownie
The ingredients in this recipe make enough brownie batter to fill up 2 ramekins. So, it’s a lovely way to share dessert with your best friend, spouse, or even your kids.
I didn’t add any mix-ins or toppings, but there are lots of ways that you can change it up! If you do, it will increase how many carbs it has, so always remember that.

Keto Pumpkin Chocolate Idea
There is a teeny bit of prep involved. You have to mix all the ingredients in a separate bowl before you add them to the mugs or ramekins. Honestly, if you wanted to try and cut the recipe in half you might be able to mix everything together in one ramekin without dirtying another bowl.
It only takes about 2 minutes max for these brownies to cook in the microwave! It’s so fast! Since all microwaves have different amounts of power, I suggest checking on your brownies in 30-second intervals.
Almond Flour Brownies
I used almond flour to make the brownies. When you buy almond flour, don’t buy almond meal. Almond meal has bits of the skin from the nuts mixed in. If you use almond meal, the brownies will have a gritty texture. It doesn’t ruin them, but it sure does distract from their velvety texture.
I don’t have to tell you to eat the brownies fresh, you’ll be scraping the mug clean! I did want to encourage you to eat them quickly though. They don’t store very well in the refrigerator. Thankfully, they are so easy to make that you won’t want to try and make them ahead of time.
