There are only a few simple ingredients you need for this easy keto coconut mojito recipe. Boiling water, sweetener, and coconut flakes together create a simple syrup just like a professional would use. Add vodka, sparkling water, and lime and mint to garnish.

A low carb mojito can be made in minutes. Double or triple this same recipe for several servings.

Ingredients

  • Mint leaves 
  • Water 
  • Swerve (or any sugar-free alternative) 
  • Lime 
  • Unsweetened coconut flakes 
  • Vodka 
  • Coconut sparkling water or tonic water 

Directions

Add water, swerve, and coconut flakes to a saucepan and bring to a boil. Remove from heat.

Cut lime in half. Juice 1⁄2 lime in glass and save the remaining half to garnish.

Add 3-4 mint leaves to the glass. 

Pour homemade simple syrup into the glass. 

Muddle.

  • 3-4 mint leaves
  • 3 tbsp water
  • 1 tbsp swerve
  • 1 lime
  • 1 tbsp unsweetened coconut flakes
  • 1 oz vodka
  • 4 oz coconut sparkling water

Instructions
 

  • Add water. swerve. and coconut flakes to a saucepan and bring to a boil. Remove from heat.
  • Cut lime in half. Juice 1/2 lime into glass. Save the remaining half for garnish
