This super easy Keto Reuben Dip recipe is always a favorite! You can choose to make this Hot Reuben Dip on the stovetop or in the oven as I did! Either way, the result is a hot Reuben dip recipe that tastes just like the classic Reuben sandwich!
This is another fun low carb version of a Reuben sandwich that we all love! It’s got all the tasty classic Reuben sandwich ingredients baked into a low carb hot dip! I also frequently make this Keto Buffalo Chicken Dip and I always keep this Veggie Dip handy for the kids!
All are equally delicious but I have a weak spot for anything that tastes just like my favorite Reuben sandwich.
I’ve seen lots of low carb Reuben Dip recipes customized in many different ways but I kept it simple.
I used corned beef, sauerkraut, Swiss cheese, pickles and my homemade Russian dressing you can also use this keto-friendly thousand island.

You can easily serve this low carb Reuben dip right out of the skillet (this one if my favorite) with pork rinds, celery or low carb crackers (I’ll be sharing an easy recipe soon) or even spread on these easy Keto Cheese Buns!! If you’re not concerned with carbs then this dip goes great with your favorite chips!
How To Make This Keto Reuben Dip Recipe
Ingredients:
Softened cream cheese
Sour cream
Deli corned beef
Sauerkraut
Shredded Swiss cheese
Russian dressing (click here for recipe) or buy a low carb thousand island dressing
Dill pickles
Make it yours:
Swap out corned beef with turkey, or pastrami.
Instead of swiss cheese, you can also use mozzarella, provolone or even pepper jack cheese!
Directions:
Preheat oven to 350F
Make your dressing. Set aside.
Shredded corned beef with a fork.
In a bowl add cream cheese, sour cream, Russian dressing, and mix.
Add sauerkraut, pickles and corned beef to the mixture. Stir until all the corned beef is coated with mixture.
Place mixture into skillet and top with cheese.
Bake for 20 minutes.
Remove from oven and top with reserved corned beef and broil 3-5 minutes or until corned beef is crispy.
Serve hot with pork rinds.

Ingredients
- 8 ounce softened cream cheese
- 1/2 cup sour cream
- 8 ounces deli corned beef
- 1/2 cup drained sauerkraut
- 1 cup shredded swiss cheese
- 1/4 cup Homemade Russian Dressing (see link above) or low carb Thousand Island
- 1/2 cup chopped dill pickles
Instructions
