There are so many different names I could have used to describe this delicious salad because it is full of delicious whole ingredients. Chicken, spinach, artichoke, cream cheese, and bacon – together they make a really rich and filling lunch that is surprisingly low-carb! 

Keto Spinach Artichoke Salad

Yup, there are only 2 grams net carbs in each serving of this rich salad. The cream cheese is so filling that you won’t be tempted to overindulge in it at all. 

Chicken Artichoke Recipe 

One thing I love so much is spinach artichoke dip – don’t you? It’s thick and creamy and oh so delicious! I took the idea behind the popular dip and improved on it until I had a nourishing salad that you can enjoy for lunch. 

Keto Spinach Artichoke Salad

There are a lot of different ways to serve it, too! The easiest way is to just eat it like it is. It’s pretty thick and easy to eat with a fork.

You can also omit the spinach and instead layer the salad onto large leaves of lettuce. The crisp lettuce wraps taste so good with the creamy and tangy salad. Or, slice a cucumber and layer the salad on top of the cucumber slices.

This version is perfect to serve as an appetizer at parties.

Canned chicken is a very budget-friendly form of protein. I love creating new chicken salad recipes with canned chicken. You don’t have to worry too much about using it since it lasts quite a bit in the can! Plus, it is so affordable that you can make an entire meal with it without breaking the bank.

You don’t have to use canned chicken. You can use any leftover chicken that you have in the refrigerator – even rotisserie chicken. 

Low-Carb Artichoke Recipe

Did you know that artichokes are incredibly good for you? It really is! It’s an excellent source of vitamin C, vitamin K, vitamin B6, and even iron and potassium. If you struggle with anemia, adding iron-rich foods like spinach and artichokes is a wonderful idea.

Celery is full of fiber, which helps to lower the overall net carb count. Even if you aren’t a huge fan of celery, eating it in this recipe is a wonderful addition to your keto diet. 

Chicken Spinach Salad 

The combination of cream cheese and mayonnaise makes this salad incredibly indulgent and filling. It’s really easy to customize and change this recipe so it tastes how you want it to. It’s not very spicy, so if you like salads with more heat, slice up some jalapeno or poblano peppers.

You can also garnish it with some chopped green onion and a sprinkle of paprika if you like. 

This recipe is perfect for your meal prep! Store it in an airtight food storage container and keep it refrigerated for up to 3 days. After 3 days the crunchy ingredients will soak up the dressing and it won’t taste as delicious.

Ingredients:

Canned chicken breast 
Fresh raw baby spinach 
Stalk of celery 
Canned artichoke hearts
Mayonnaise
Garlic powder
Cream cheese 
Bacon crumbled
Salt and pepper

Instructions:

1. In a bowl, combine the mayo and cream cheese until blended well.

2. Add in the remaining ingredients, and stir to combine.

Ingredients
  

  • 10 ounces Canned Chicken drained
  • 2 cups Fresh Raw Baby Spinach chopped
  • 1 stalk Celery finely chopped
  • 1/2 cup Chopped Canned Artichoke Hearts
  • 1/3 cup Mayonnaise
  • 1/2 tsp Garlic Powder
  • 2 ounces Cream Cheese softened
  • 1/4 cup Bacon crumbled

Instructions
 

  • In a bowl, combine the mayo and cream cheese until blended well.
  • Add in the remaining ingredients, and stir to combine.
  • Serve immediately, or chill for 1 hour before serving if desired.
