There are so many different names I could have used to describe this delicious salad because it is full of delicious whole ingredients. Chicken, spinach, artichoke, cream cheese, and bacon – together they make a really rich and filling lunch that is surprisingly low-carb!
Yup, there are only 2 grams net carbs in each serving of this rich salad. The cream cheese is so filling that you won’t be tempted to overindulge in it at all.
Chicken Artichoke Recipe
One thing I love so much is spinach artichoke dip – don’t you? It’s thick and creamy and oh so delicious! I took the idea behind the popular dip and improved on it until I had a nourishing salad that you can enjoy for lunch.
There are a lot of different ways to serve it, too! The easiest way is to just eat it like it is. It’s pretty thick and easy to eat with a fork.
You can also omit the spinach and instead layer the salad onto large leaves of lettuce. The crisp lettuce wraps taste so good with the creamy and tangy salad. Or, slice a cucumber and layer the salad on top of the cucumber slices.
This version is perfect to serve as an appetizer at parties.
