When you have a sweet tooth like mine, the keto diet can feel pretty restrictive. That’s why I am always creating copycats of my favorite desserts from when I was a kid.
The classic strawberry shortcake recipe features a small spongy cake, topped with syrupy strawberries and airy whipped cream. There are usually just three simple ingredients, and you can often find them sold together in the grocery store.
In order to make this recipe keto-friendly, I made a low-carb shortcake and didn’t smother the strawberries in syrup. Fresh strawberries are sweet enough and don’t need extra sugar.
Keto Strawberry Shortcake
This recipe will make two delicious low-carb shortcakes. They are the perfect desserts to serve at an outdoor picnic or party. If you want to make more than 2, I suggest doubling or tripling the recipe.
Serve it with a light low-carb strawberry jello fluff dessert. The flavors will complement each other in the best way.
There are two ways to make shortcakes. I used an ice cream scoop to create two mounds on a cookie sheet. As they baked, the shortcakes spread out and create the perfect-sized mini cakes.
Another option is to use a muffin pan. Spread the cake batter around the inside of each muffin cup. Place a ball of aluminum foil inside the middle of each cup. This will prevent them from baking into the shape of a muffin and keep an indentation in the middle.
When they are finished baking, they will look like hollow muffins, with the perfect space for some strawberries and whipped cream.
Are Strawberries Keto
Yes, strawberries are keto-friendly. They are so sweet that this often comes as a surprise, even to me! There are 9 grams of net carbs in 1 cup of strawberries.
They might have a lot of natural sugar in them, but they also have a lot of fiber, which keeps the net carbs count low.
Almond Flour Shortcake
The secret to this almond flour shortcake is a combination of almond flour and sour cream. Use almond flour, not almond meal. Almond meal will make the shortcakes taste grainy.
You should also use full-fat sour cream. It will make the shortcakes lighter and richer at the same time.
Gluten-Free Strawberry Shortcake
Strawberry desserts are some of my favorites! I enjoyed my low-carb strawberry pretzel salad and these little shortcakes are just as delicious. These are the perfect gluten-free dessert to serve at parties.
Everyone will enjoy them without even being able to tell they are gluten-free and low-carb.
Keto Strawberry Shortcake Recipe

**This recipe will create 2 individual shortcakes**
INGREDIENTS:
Almond flour
Sour cream
Granulated sugar substitute
Egg
Baking powder
Salt
Strawberries
Sugar free whipped topping
INSTRUCTIONS:
Preheat the oven to 350 degrees F.
In a bowl, combine egg, sugar, sour cream and vanilla.
Add almond flour, salt and baking powder. Stir until just combined.
Spoon your batter onto a prepared baking sheet. (I used an ice cream scoop to create 4 large mounds.) Be sure the mounds are 2 inches apart, the dough will spread slightly.
Bake for approximately 16-18 minutes, or until slightly golden brown. Remove from the oven and let cool.
To create shortcakes, take 1 biscuit and top with whipped topping.
Add a few sliced strawberries, then repeat with the remaining biscuit.
