Have you ever heard of the old-fashioned strawberry pretzel salad? It’s a southern dish that people say probably originated in the 1960s when the Joy of Jello cookbook was published. Yup, in the south and midwest, lots of people remember eating jello salads with their dinner.
Strawberry pretzel salad usually consists of a crispy pretzel crust with two layers on top – a cheesecake layer and strawberry-filled jello on the very top. I recreated this recipe and made it gluten-free, low-carb, and keto-friendly.

Low-Carb Pecan Crust
In an effort to reimagine the old-fashioned strawberry pretzel as a keto-friendly dessert, I made the bottom layer out of crunchy pecans and almond flour. This gave it more of a cake-like consistency.
If you think it’s too thick, you can just make this layer thinner and it will become even crispier.
You can even reuse this crust recipe and make a delicious cheesecake on top. Or fill it with some chopped fresh fruit and jello for a fun jello salad pie. If you come up with new ideas and ways to use this crust recipe, let me know. I’d love to hear!
Are Pretzels Low-Carb
No, regular pretzels are not low-carb. In fact, one ounce of hard pretzels has 23 grams of carbs. That’s why I used pecans and almond flour instead of pretzels. The pecans give the crust a fantastic crunch.
When you use almond flour, remember to use almond flour and not almond meal. They look a lot alike, but they are made differently. Almond meal has bits of almond skins mixed in. If you use it, your crust will have a grainy or gritty texture.
No-Bake Strawberry Dessert Easy
This is a really simple no bake strawberry dessert that you can throw together at the last minute.
There is one tip that is very important. You must allow the jello to cool down completely after you bring it to a boil. It must cool down to room temperature before you pour it on top of the cream cheese layer. If it is too warm, it might melt the cream cheese layer.
To speed up the cooling down process, place the Jello in the refrigerator for a few minutes.
Low-Carb Strawberry Pretzel Salad Recipe

INGREDIENTS:
Almond flour
Granulated sugar substitute
Butter
Pecans
Heavy whipping cream
Cream cheese
Strawberry jello – sugar free
Hot water
Strawberries
INSTRUCTIONS:
In a bowl, combine almond flour, ¼ cup sugar substitute, and chopped pecans.
Stir in melted butter. Press mixture into a parchment paper lined pan. Place in the freezer to set while you work on the next layer.
Combine heavy whipping cream, cream cheese, and remaining ¼ cup sugar substitute. Mix until smooth and fluffy.
Spread the mixture over the crust, then return to the freezer while you work on the last layer.
In a bowl, stir together hot water and jello until the mix has fully dissolved. Place the bowl in the refrigerator to cool.
Once the jello has cooled, thinly slice strawberries and add them to the jello. (If you do not let the jello cool, the heat will melt the cream cheese layer.)
Once the jello has cooled completely, carefully pour it over the cream cheese layer. (I used a soup ladle for this).
Place the dish in the refrigerator for a few hours, or until the jello has fully set.
