This lovely bundt cake is topped with a vanilla cream cheese frosting and real cranberries! Low-carb cranberry Christmas cake is so fun!

Low Carb Cranberry Christmas Cake

Low-Carb Cranberry Cake

If you’re looking for a festive cake that you’ll be proud to make the focal point of your Christmas dinner, then make this easy recipe. Seriously, this lightly-sweet cake looks like it’s ready for Christmas, with the bright red cranberries on top of a bed of cream cheese frosting.

Low Carb Cranberry Christmas Cake

It reminds me of Christmas bulbs on top of snowy hills. You won’t just love how it looks; you’ll enjoy how it tastes, too!

The cake is flavored with bold orange extract and real, fresh cranberries! This is a deliciously moist cake, with cream cheese, heavy whipping cream, and plenty of real butter.

Each bite will melt in your mouth.

Cranberry Christmas Cake

I called this a low-carb recipe, not a keto recipe. And I did that on purpose.

Low Carb Cranberry Christmas Cake

With all the dairy and cranberries in it, the carb count went up a bit. There are 7 grams net carbs in each slice – and this entire recipe makes about 12 slices of cake.

So be very careful with how much you eat, especially if you’re trying to lose weight. But the good news is that with proper planning, you can enjoy a slice of this rich and fruity cake.

It’s so decadent and you won’t feel guilty eating an entire slice. With all the festive garnishes and flavors, it’s the perfect Christmas cake.

Keto Christmas Recipes

This cake will look perfect on a dessert table with a few of my favorite holiday treats. Add some Keto Christmas Cookie Cups to the table with the cake.

Low Carb Cranberry Christmas Cake

They’re a really simple dessert you can whip up in minutes. Or make some red, green and white Keto White Chocolate Christmas Shooters.

And don’t forget about the savory appetizers! If you like cheese, then make Keto Christmas Ornament Cheese Balls or one large Keto Christmas Tree Cheese Ball.

If you’re serving a bunch of guests, then set out a snack tray full of Keto Meat and Cheese Christmas Trees.

Low-Carb Christmas Cake

I have a few more notes about some of the ingredients in this tasty cake. First, make sure you’re using almond flour and not almond meal.

Low Carb Cranberry Christmas Cake

If you use almond meal, the cake will taste too grainy. Next, soften the butter and cream cheese ahead of time.

If you’re in a rush, you can soften them faster by heating up a glass bowl with a little water in the microwave and then putting the (empty) bowl on top of the butter and cream cheese for a few minutes.

Finally, don’t forget to use the orange extract. This is the cake’s secret ingredient.

It really brings out the zestiness in the cranberry cake. I’ve used it before to make low-carb orange cranberry cheesecake, so you’ll definitely use it again.

How To Store Cake

Normally, you can just store a baked cake in an airtight container at room temperature. But since this cake has a cream cheese frosting (and is baked with fresh cranberries), I suggest sealing it tightly and storing it in the refrigerator.

You can freeze the cake, too. Store it in a freezer-safe cake container and seal it completely with a lid and/or aluminum foil.

Keep it in the freezer for up to six months. Let them thaw naturally in the refrigerator.
