The cake is flavored with bold orange extract and real, fresh cranberries! This is a deliciously moist cake, with cream cheese, heavy whipping cream, and plenty of real butter.

Cranberry Christmas Cake
I called this a low-carb recipe, not a keto recipe. And I did that on purpose.
With all the dairy and cranberries in it, the carb count went up a bit. There are 7 grams net carbs in each slice – and this entire recipe makes about 12 slices of cake.
So be very careful with how much you eat, especially if you’re trying to lose weight. But the good news is that with proper planning, you can enjoy a slice of this rich and fruity cake.
It’s so decadent and you won’t feel guilty eating an entire slice. With all the festive garnishes and flavors, it’s the perfect Christmas cake.

Low-Carb Christmas Cake
I have a few more notes about some of the ingredients in this tasty cake. First, make sure you’re using almond flour and not almond meal.
If you use almond meal, the cake will taste too grainy. Next, soften the butter and cream cheese ahead of time.
If you’re in a rush, you can soften them faster by heating up a glass bowl with a little water in the microwave and then putting the (empty) bowl on top of the butter and cream cheese for a few minutes.
Finally, don’t forget to use the orange extract. This is the cake’s secret ingredient.
It really brings out the zestiness in the cranberry cake. I’ve used it before to make low-carb orange cranberry cheesecake, so you’ll definitely use it again.
How To Store Cake
Normally, you can just store a baked cake in an airtight container at room temperature. But since this cake has a cream cheese frosting (and is baked with fresh cranberries), I suggest sealing it tightly and storing it in the refrigerator.
You can freeze the cake, too. Store it in a freezer-safe cake container and seal it completely with a lid and/or aluminum foil.
Keep it in the freezer for up to six months. Let them thaw naturally in the refrigerator.

Ingredients:

- Softened butter
- Vanilla
- Orange extract
- Fresh cranberries
- Baking powder
- Large eggs
- Cream cheese softened
- Heavy whipping cream
- Swerve confectioners sugar substitute
For the icing:
- Cream cheese softened
- Heavy whipping cream
- Swerve confectioners sugar substitute
- Orange extract
For garnish:
- Keto white chocolate chips
- Coconut oil
- Fresh cranberries
Instructions:
Preheat the oven to 350 degrees.
Add the butter, cream cheese and 1 cup Swerve to a mixing bowl, and blend until smooth.
Mix in the almond flour, vanilla, orange extract, baking powder, eggs and heavy whipping cream until well combined.
Fold the cranberries into the batter.
Spread the batter evenly into a well greased bundt pan.
Bake for 40-45 minutes, or until browned and completely cooked through. Cool the cake completely.
Once cooled, blend together the cream cheese and Swerve for the icing until smooth. Add in the orange extract and heavy whipping cream, and beat until creamy.
Smooth the icing over the cooled cake.
Place the white chocolate chips and coconut oil into a microwave safe bowl, and heat at 30 second intervals until smooth and melted.
Garnish the cake with fresh cranberries.
Drizzle the white chocolate mixture over the cake.
