Keto German Chocolate Cake
This is almost a keto German chocolate cake. I use a keto pound cake recipe as the base.
Then, I covered the pound cake with a coconut-pecan filling. Finally, I topped it with a rich chocolate ganache.
Even though the cake is vanilla, it will remind you of your favorite German chocolate cake!
Do you want to make it a chocolate cake? Then add some cocoa powder to the dry ingredients.
I thought the addition of more chocolate would be a bit too rich and overwhelming. But if you really love chocolate, then give it a try!
German Chocolate Pecan Pound Cake
I love using pecans in my low-carb desserts! I used them in the German chocolate filling for this cake and then added a few more on top as a garnish.

It turns out that a keto pound cake is the perfect base for this super-rich dessert.

How To Store Chocolate Cake
I suggest storing this chocolate cake in a sealed, airtight container and keeping it in the refrigerator. It will stay fresh for up to three days.
You can freeze the cake, too. First, place the cake – uncovered – on a baking sheet.
This will freeze the entire cake, including the frosting. Then wrap the cake in plastic wrap and put it in an airtight and freezer safe food storage bag.
Keep it in the freezer for up to six months.

Ingredients
Cake:
- Almond Flour
- Eggs
- Baking Powder
- Swerve Confectioner’s Sugar Substitute
- Butter
- Xanthan Gum
- Pecans
- Keto Chocolate Chips
Chocolate Topping:
- Keto Chocolate Chips
- Heavy Whipping Cream
- Chopped Pecans
Directions
Preheat the oven to 350 degrees. Cream together the butter and Swerve until smooth and fluffy.
Blend in the almond flour, eggs, baking powder and xanthan gum until well combined.
Fold the pecans and chopped chocolate into the batter.
Spread the batter into a well greased loaf pan. Bake for 20 minutes, then tent with aluminum foil and bake for another 20-30 minutes
until cooked through.
Let the pound cake cool.
Place the chocolate chips and heavy whipping cream into a microwave safe bowl. Heat at 30 second intervals until melted and combined.
Spread the mixture over the cooled pound cake, and sprinkle with the pecans. Let the icing set before serving.

- 1/2 tsp Xanthan Gum

- 1/3 cup Keto Chocolate Chips chopped
Chocolate Topping
- 1/2 cup Keto Chocolate Chips
- 3 tbsp Heavy Whipping Cream
- 1/3 cup Chopped Pecans
Instructions
