What Is Cowboy Caviar
This delicious dip goes by quite a few different names. It’s also called Texas caviar and redneck caviar. It’s a cold salad (or dip) made with black-eyed peas, corn kernels, tomatoes, and onions, all topped with a vinaigrette dressing.
There are a lot of different recipes for the best type of dressing to use. Some people prefer a rich balsamic vinaigrette, others like a sweeter red wine vinaigrette, and others prefer a southwest flair with cilantro and lime juice.
Most people prefer to use tortilla chips to scoop up this dip. Some people eat it with a fork. Since it reminds me of pico de Gallo, I prefer to use some kind of chip.
Keto Cowboy Caviar
To remake this delicious dip into a keto-friendly version, I had to replace the corn and black-eyed peas. You see, black-eyed peas are actually a type of beans, and they are very high in net carbs. One cup of black-eyed peas contains 25 grams of net carbs!
I used black soybeans instead of black-eyed peas. Since I used soybeans, this recipe is a “dirty keto” recipe because a lot of strict keto dieters prefer not to eat any kind of soybeans on the keto diet.
Soy is a personal preference, so if you don’t mind eating a few soybeans once in a while in the keto diet, this dip only has 4 grams of net carbs in each serving. It’s a delicious and low-carb snack that is also high in protein and nutrients.
Cowboy Caviar Recipe Healthy
This Texas caviar recipe is really good for you! Soybeans are high in fiber and protein.
The bell peppers are a fantastic source of vitamins A and C. Tomatoes are a wonderful source of fiber and contain just enough natural sugar to sweeten the dip without raising the net carbs.
Low-Carb Cowboy Caviar
This is a wonderful recipe to make ahead and store in the refrigerator. Keep it in an airtight container in the refrigerator for up to three days. You might have to mix it up again as the dressing might separate and fall to the bottom.
The longer you keep it in the refrigerator, the more the peppers will soften. That’s why I say you should try to eat it as soon as possible.
How to Eat Cowboy Caviar
This keto cowboy caviar tastes delicious when you eat it with a fork. You could also just place a few spoonfuls on a large piece of lettuce and eat it like a wrap. If you want to eat it like a dip, use either pork rinds, cucumber slices, or large pieces of raw bell peppers to scoop up the dip.
