You can use either boneless and skinless chicken thighs or bone-in and thighs with the skin. If you buy the chicken with the skin, I suggest removing the skin first so you can really rub the spices into the chicken.
This recipe also works with pork chops too. The cooking temperature will be different since pork chops only need to cook to 145 degrees F.

This is a really versatile recipe that goes with tons of easy low-carb side dish recipes. Serve it with your favorite chopped salad and some garlic butter cauliflower rice. It also tastes perfect with garlic butter cauliflower mash and some parmesan green beans.

I love using paprika with garlic powder and onion powder. If you want the chicken to have a bit more spice, add some red pepper flakes.

I used very basic spices on the thighs. Use all sorts of different herbs and spices to give it different flavors. Here are some of my favorite spice combinations for chicken:
- Italian – Oregano, Parsley, Basil, Garlic
- Indian – Cumin, Curry Powder, Garam Masala, Coriander
- Chili – Chili powder, Garlic, Red Pepper Flakes
- French – Herbs De Provence, Paprika, Garlic Powder
You can also add some shredded parmesan cheese on top as they bake for a crispy coating.
