Easy Keto Chicken Broccoli Casserole
Before keto, I used to love cheese chicken, broccoli, and rice casserole. Now that I’m eating a low-carb diet, I had to figure out how to make healthy swaps so I could still enjoy my favorite meals.
Thankfully, there are lots of ways you can customize this recipe. It’s super easy to make and a really flexible recipe with lots of room to play with.
Here’s what I used in my casserole:
- Chicken thighs – use boneless and skinless thighs since you will be cutting them into smaller pieces. You can also use chicken breast instead.
- Broccoli florets – Chop them up into smaller bites
- Butter – unsalted
- Garlic – minced
- Heavy whipping cream
- Shredded cheddar cheese
- Parmesan cheese
- Bacon
Low Carb Dinner For Your Family
There are only 6 grams of net carbs in each serving! If you want to give your kids a healthy grain for their side, make some rice or mashed sweet potatoes. Both options taste amazing with this recipe.
This is a low-carb dinner that the whole family will love. The chicken comes out perfectly juicy and tender and the broccoli soaks up all the creamy, cheesy, sauce. It’s heavenly.
You can even make it ahead of time and use it for meal prep! Just store it covered in the refrigerator for up to a week. Keep in mind that when you refrigerate this casserole, the cheese sauce will harden in the fridge. All you have to do is reheat it in the oven and it will melt beautifully.
Hearty Keto Dinner
The whipping cream and cheddar cheese combine with the chicken and broccoli and fill you up! You will be surprised how full you feel afterward. There are ways you can customize this recipe – try one of these ideas:
- Add cauliflower or cabbage to the casserole

Keto Chicken and Broccoli Casserole With Bacon

Ingredients:
Olive oil
Boneless skinless chicken thighs cut into bite-sized pieces
Broccoli florets
Butter unsalted
Minced garlic
Heavy whipping cream
Shredded cheddar cheese divided
Parmesan cheese
Bacon pieces
Salt and pepper
Instructions:
Preheat the oven to 350 degrees.
Heat the olive oil in a large skillet over medium high heat on the stove.
Add the chicken to the skillet along with salt and pepper to taste, and saute until the chicken is cooked through.
While the chicken is cooking, blanch the broccoli in boiling water until it is just starting to become tender. Rinse under cold water and drain completely.
Mix the chicken and broccoli together in a greased 9×13 casserole dish.
In a saucepan over medium heat, melt the butter. Add the minced garlic to the melted butter, and saute for 30 seconds.
Pour the heavy whipping cream into the pan, and saute and whisk until it thickens.
Stir 1 cup of cheddar cheese and the parmesan cheese into the cream mixture until the cheeses have completely melted.
Fold the bacon pieces into the cheese sauce.
Pour the cheese sauce over the chicken and broccoli, and toss to coat. Sprinkle the remaining cheese on top of the casserole and back for 20 minutes.
Add additional bacon pieces of garnish if desired and serve.
