When you are looking for a keto-friendly peanut butter, always look at the ingredients list. Find one that only has two ingredients – peanuts and oil (and maybe salt). Do not buy anything that lists any type of sugar as an ingredient.

If you are allergic to peanut butter, you can use almond butter instead. You should probably leave the peanut butter cups off as well if you are avoiding peanut butter.

Ingredients:

For the crust layer:

Almond flour
Butter 
Swerve confectioners sugar substitute
Vanilla extract

For the filling:

Cream cheese softened
Heavy whipping cream
Swerve confectioners sugar substitute
Natural peanut butter
Vanilla extract
Sugar free peanut butter cups

Instructions:

Mix together all of the ingredients for the crust until well combined.

Line 12 sections of a mini muffin pan with mini cupcake liners.
Press the crust mixture into the 12 cupcake liners.

In a mixing bowl, blend together the ingredients for the filling, minus the peanut butter cups, until smooth.

Fill the cupcake liners the rest of the way full with the filling mixture, and place a sugar free peanut butter cup on the top of each one.

Ingredients
  

Gluten-Free Crust

  • 1 cup Almond Flour
  • 3 tbsp Butter melted
  • 2 tbsp Swerve Confectioner's Sugar Substitute
  • 1/2 tsp Vannilla Extract

Peanut Butter Cheesecake

  • 4 ounces Cream Cheese softened
  • 1/4 cup Heavy Whipping Cream
  • 3 tbsp Swerve Confectioner's Sugar Substitute
  • 2 tbsp Natural Peanut Butter
  • 1/2 tsp Vanilla Extract
  • 12 Sugar-Free Peanut Butter Cup Candies

Instructions
 

  • Mix together all of the ingredients for the crust until well combined.
  • Line 12 sections of a mini muffin pan with mini cupcake liners.
  • Press the crust mixture into the 12 cupcake liners.
  • In a mixing bowl, blend together the ingredients for the filling, minus the peanut butter cups, until smooth.
  • Fill the cupcake liners the rest of the way full with the filling mixture, and place a sugar-free peanut butter cup on the top of each one.
  • Chill for several hours before serving.
