Is Chicken Thai Soup Keto-Friendly?
Also called Tom Kha Gai, Thai coconut chicken soup is not normally keto-friendly. It’s a creamy soup that is sweetened with coconut sugar and usually has lots of vegetables in it, including sweet corn.
Thankfully, it’s super easy to make a keto-friendly version of this zesty soup! All you have to do is replace the sweetener and use only low-carb vegetables. I used the same curry and lime flavors. In fact, as you enjoy this soup, you’ll swear it came from your favorite Thai restaurant.
Thai Chicken Soup
Most types of Thai chicken soup feature chicken and green herbs in a creamy white broth. Some types of soup also include rice. If you want to add some rice, I suggest making some cauliflower rice.
I have a few notes about the ingredients that I wanted to share with you. There are lots of ways that you can customize this soup to make it taste how you want.
- I used boneless skinless chicken breasts. Save time and shred a rotisserie chicken. Or, use some shredded cooked chicken thighs.
- Make sure you use Thai red curry paste. Yellow curry won’t have the same flavor, although it might still work ok.
- Remember to use a can of coconut milk, not the refrigerated kind in a carton. Canned coconut milk is much thicker and will make the soup really thick and rich.
- The spinach is optional, but I suggest adding it. Use only fresh spinach. Frozen or canned will taste pretty strange in this soup. The fresh spinach will give your soup lots of fiber, vitamin A, and iron.
- Use your favorite garnishes on top of the soup. Chopped peanuts are always perfect with Thai curry flavors. I also like to top with fresh, crunchy diced red pepper and some fresh green parsley.
Low-Carb Thai Chicken Soup
This soup stores really well for your meal-prep. I like to store my homemade soups in a mason jar because the lid screws on nice and tight.
It will stay fresh in the refrigerator for up to 5 days. When you are ready to enjoy it again, I suggest reheating it on the stove or microwave until it is super hot.
Keto Creamy Chicken Soup
This is the perfect soup to enjoy when you are craving something with some spice to it. The Thai red curry isn’t super hot, so if you want it to be even spicier, I suggest adding some Sriracha and fresh ginger.
Since this has chicken, coconut milk, and spinach, it’s basically an entire meal in a bowl. I like to enjoy this soup for lunch.
What To Eat With Thai Chicken Soup
If you are going to eat this for lunch, eat it with a low-carb grilled cheese. It’s a light and easy lunch that is incredibly satisfying!
This also makes a perfect starter for a Thai dinner. Serve it with keto chicken pad Thai. That’s one of my favorite Thai dishes. For those of you that like lots of spice, make some spicy Thai noodles with this soup.
Easy Creamy Chicken Soup
Bust out of the chicken soup rut and try something refreshingly different! This soup only takes about 45 minutes to make from start to finish.
If you want, you can also make this in your slow cooker. Just add all the ingredients and let it cook on low for 6-8 hours. You will be able to smell the soup as it cooks all day!

Ingredients:

Butter
Medium onion
Garlic
Thai red curry paste
Lime juice
Swerve brown sugar substitute
Ginger paste
Chicken broth
Canned coconut milk
Fish sauce
Spinach
Salt
Peanuts
Instructions:
1. Melt the butter in a saucepan over medium high heat.
2. Add the chicken, season with salt to taste, and saute until cooked through. Remove and set aside.
3. Reduce the heat to medium, and add the onion to the skillet. Saute until softened.
4. Mix in the garlic and saute for 30 seconds.
5. Add in the red curry paste, brown sugar, juice from one lime, ginger paste and fish sauce. Stir to combine.
6. Pour in the chicken broth and coconut milk.
7. Bring to a boil, and simmer covered for 20 minutes.
8. Stir the spinach into the pot and cook until wilted.
9. Return the chicken to the pot and simmer for another 5 minutes before serving.
10. Garnish with chopped peanuts, diced red bell pepper and chopped parsley before serving.
