What Is Beef Stroganoff
Beef stroganoff originated in Russia. It was traditionally made with sauteed beef served with smetana. Since it was created in the 19th century, there have been a ton of variations of it.
Today, it’s usually a sauce made with sour cream and beef broth, with mushrooms and beef and served over pasta. With just a few minor changes, I was able to turn this satisfying recipe into a low-carb dream come true!
What Cut Of Meat Is Best For Beef Stroganoff
Save yourself time and money use ground beef instead of steak. You can certainly use a steak if you want to! If you are going to use a steak, I suggest using something that is tender and juicy, like boneless rib eye, sirloin, or tenderloin.
Cut the steak into thin strips so that it cooks faster and leaves the meat nice and tender.
Keto Beef Stroganoff Soup
This low-carb soup has lots of the same flavors as classic beef stroganoff. The mushrooms and buttery broth with the salty Worcestershire sauce all remind you of the same Russian dish you love!
I like to brown the ground beef at the same time as the onion and mushrooms. This way, the flavors from the onion and mushrooms get into the beef. Plus, it saves me prep time too!
Beef Stroganoff Soup
This soup is incredibly easy to customize. Use your favorite type of mushrooms, just make sure they are sliced nice and thin. You can also use any type of onion. Save yourself time and use frozen diced onion.
The palmini noodles are completely optional. I like adding them because it looks and tastes like traditional beef stroganoff.
This is basically a complete meal on its own, but you can also serve it with your favorite salad and a side of garlic mashed cauliflower. These keto bacon stuffed mushrooms would taste delicious with this soup too! They have lots of the same flavors and are packed with nutrients and fiber.
Keto Beef Soup
This keto beef soup is incredibly easy to freeze and save for later! Cook it according to the recipe card, then let it cool off completely. Then, place it in a resealable freezer-safe food storage bag. Lay the bag of soup flat on a baking sheet and place the baking sheet in the freezer.
After the soup is frozen solid, you can take it off of the baking sheet.
When you are ready to eat it again, place it in the refrigerator overnight to let it thaw. Then, heat it up on the stove. It’s delicious and stays fresh in the freezer for up to 6 months.

Ingredients:
Ground beef
Onion
Mushrooms
Butter unsalted
Garlic
Chicken broth
Worcestershire sauce
Spinach raw
Palmini lasagna noodles
Salt and pepper
Instructions:
Add the ground beef, onion and mushroom to a pot over medium high heat. Cook until the vegetables are softened and the beef is browned. Remove and set aside. Discard any extra grease.
Reduce the heat to medium and add the butter and garlic to the pot. Saute for 30 seconds.
Pour in the chicken broth, worcestershire sauce and salt and pepper to taste.
Cut the palmini noodles in half lengthwise, and then in half again across.
Add the noodles to the pot and bring to a low boil.
Stir in the spinach and cook until wilted.
Reduce the heat to medium low, and add in the heavy whipping cream and meat mixture.
Simmer for 10 minutes before serving.

- 1/2 Onion chopped
- 1 cup Mushrooms sliced thin
- 2 tbsp Butter unsalted
- 2 tsp Garlic minced
- 6 cups Chicken Broth
- 2 tsp Worcestershire sauce
- 3 cups Raw Spinach
- 1 can Palmini Lasagna Noodles drained and rinsed
Instructions

Add the ground beef, onion and mushroom to a pot over medium high heat. Cook until the vegetables are softened and the beef is browned. Remove and set aside. Discard any extra grease.
