Converting a bruschetta chicken recipe to be low-carb is actually really simple. You just have to use a low-carb breading. Some bruschetta chicken recipes sweeten the sauce with sugar, but I skipped that because I didn’t think it needed to be any sweeter.
The tomatoes and fresh basil are sweet enough as they are.
There are also baked bruschetta chicken recipes. I love this bruschetta chicken skillet meal because it only takes 20 minutes of prep time and 25 minutes of cooking time. Baked recipes take about 45 minutes to bake. This is a huge time saver.
Use a cast iron skillet when you make this recipe. That way you can transfer the entire skillet to the oven and broil it to get that extra crispy texture.
What To Eat With Bruschetta Chicken
Since this is an Italian recipe, I suggest serving it with your favorite Italian sides. Add some flaky keto garlic knots and your favorite Italian chopped salad.

How To Store Cooked Chicken
It’s best to store cooked chicken without breading on it. Once you store breaded chicken, it will only last about a day before the juices from the chicken soften the breading.

Low-Carb Breading
Some people have found that a combination of almond flour and parmesan cheese makes the perfect gluten-free breading for chicken. I personally prefer parmesan cheese and crushed pork rinds.
When you use pork rinds, you don’t have to add more salt. Plus, they are already perfectly crispy!
Remember, only use unflavored or plain pork rinds. Any flavored varieties might have added sugar or carbs.

Ingredients:
Boneless skinless chicken breasts
Butter
Minced garlic
Tomato paste
Chicken broth
Drained diced tomatoes
Salt and pepper
Shredded mozzarella cheese
Parmesan cheese grated
Crushed pork rind crumbs
Fresh basil
Instructions:
Melt the butter in a large oven-proof skillet over medium high heat on the stove.
Add the garlic to the skillet, and saute for 30 seconds.
Stir in the tomato paste and chicken broth.
Season the chicken with salt and pepper, and add to the skillet.
Top the chicken with the diced tomatoes and mozzarella cheese.
Bring the mixture to a boil, reduce heat to medium low, cover and simmer for 15-20 minutes until the chicken is cooked through.
Mix together the parmesan cheese and pork rind crumbs.
Sprinkle the mixture over the top of the chicken, and place under the broiler on high for a few minutes to lightly brown.
Garnish with basil before serving.

- 1/4 cup Pork Rind Crumbs crushed
