Keto Monterey Chicken
If you have ever dined at a Chili’s restaurant before, then you are probably familiar with their Monterey chicken dish. It’s basically chicken breasts, smothered in melted cheese and a tangy BBQ sauce.
I knew I had to make a keto-friendly version of this recipe because it always looks so good on the menu! The one from Chili’s is not keto-friendly. The sauce is made with lots of sugar, so that’s a no-go.
My recipe is made with sugar-free BBQ sauce and just a few simple ingredients. It has the same amazing flavors, but a lot fewer carbs.
Monterey Chicken Skillet
For this recipe, I used boneless skinless chicken breasts. You can use chicken breast tenders or even chicken thighs if you want. Just buy what is on sale, since they all basically cook the same. No matter which type of chicken you use, always use an instant read food thermometer.
Cook the chicken until it reaches an internal temperature of 165F.
There is also room for creativity with the cheese and bacon you use. If you want it to have a bit more heat or spice, use a Jalapeno cheese from the deli. You can also use either pork or turkey bacon.
Low-Carb Chicken Skillet
I love cooking with my cast iron skillet! It really came in handy for this recipe because I cooked everything on the stove and then placed it under the broiler to crisp it all up.
This is also the perfect recipe to add to your meal prep. Store leftover chicken in your favorite airtight container. Keep it in the refrigerator for about three days max.
What To Eat With Chicken
This is a very simple recipe, so add your favorite side dishes with it. I like to serve some garlic knots and mashed cauliflower. If you love green beans, make your favorite green bean casserole on the side.
You can never go wrong with a chopped salad! This copycat Olive Garden salad will taste delicious with this chicken recipe.
Best Keto BBQ Sauce
When you are trying to use BBQ sauce, always read the labels. Only use a BBQ sauce that doesn’t have any added sugar or too many carbs.
I love to use either G Hughes or Ray’s BBQ sauce that has no sugar added. Both varieties have an incredibly smoky flavor that I enjoy.

Ingredients:
Boneless skinless chicken breast filets or boneless skinless chicken breasts cut evenly through the thickness to make filets
Salt and black pepper
Olive oil
Chicken stock
Keto friendly barbecue sauce
Colby jack cheese
Bacon
Roma or plum tomatoes
Sliced green onions
Instructions:
Season chicken breasts with salt and black pepper to taste.
Set a large skillet over medium-high heat and add olive oil. Allow the olive oil to heat through for 30 seconds. Then, place chicken breasts into skillet without overlapping. Brown chicken completely on one side for about 2 to 3 minutes, prior to flipping the chicken.
Once you turn the chicken add the chicken stock to the skillet and cook until the chicken is done.
Preheat the oven broiler.
Spoon the sugar free barbecue sauce over the chicken and top each chicken breast with a slice of cheese.
Place skillet under broiler until the cheese has melted.
Top chicken breasts with crumbled bacon, diced tomatoes, and garnish with sliced green onions.

- 1/2 cup Chicken Stock
- 1 tbsp Olive Oil
- 1 1/2 cups Keto-Friendly BBQ Sauce
- 6 slices Colby Jack Cheese
- 1/2 cup Cooked and Crumbled Bacon
- 2 Roma Tomatoes seeded and diced
- 1/4 cup Green onions sliced
Instructions

Season the chicken with salt and black pepper as desired.

Set a large skillet over medium-high heat. Add the olive oil and allow to heat through for 30 seconds. Then, place the chicken breasts into the skillet without overlapping.
