You might not think they go together, but they really do! This low-carb strawberry broccoli salad is both sweet and savory.
Strawberry Broccoli Salad
When you can’t decide whether you want some vegetables or fruit, put them both together in the same salad! That’s the beauty of strawberry broccoli salad.
I first got the inspiration from my Keto Strawberry Cucumber Salad. I loved how the sweet strawberries and crispy cucumbers tasted together.
Turns out, strawberries taste amazing with broccoli, too! And the onion adds a little something extra to it, too!
I chopped up 1/3 of a white onion, but it’s completely optional. If you don’t like the taste of raw onion, leave it out. The broccoli and strawberries will taste amazing without it.
Low-Carb Strawberry Salad
There are a few other ingredients that take the salad to a whole new level of deliciousness. First, the chopped pecans add a delightful crunch and buttery nuttiness to the salad.
They also give the salad a lot more carbs, too. So, use them sparingly. And if you need to cut back on the carbs even more, leave them out.
But you definitely don’t want to leave out the feta cheese! It has the perfect balance of creaminess and tartness to enhance the other flavors in the salad.
If you can’t do dairy, then replace the feta cheese with crumbled goat cheese. In fact, there are a bunch of different flavors of goat cheese you can choose from!
Easy Broccoli Salad
Every bite is a dance of flavors and textures! From the crispy broccoli florets to the juicy strawberries, bold onion, crunchy pecans, and soft feta cheese – you’ll fall in love with with every bite. And the tangy dressing ties it all together beautifully.
This is one of my favorite types of dressing and I’ve used it before. I made a version of it in my keto carrot and radishes salad and low-carb corned beef slaw.
Those two salads used sugar-free honey, but in this broccoli salad, I used sugar-free granulated sweetener. The flavors meld the sweet strawberries with the earthy broccoli in the best way.
What To Eat With Salad
This is the perfect side dish to serve with any entree that you prepare. It will taste amazing with something simple, like keto pan seared chicken thighs.
You can also add it on the side with something heartier, like a keto Five Guys cheeseburger grilled cheese. It will also taste amazing with some low-carb air fryer corned beef.
If you want to serve it with some soup, keto beef pho is a perfect choice! It has a vibrantly-flavored broth. And the mild and tangy salad is the perfect side dish with a bold keto Cajun chicken and shrimp soup.
How To Store Salad
This strawberry broccoli salad will stay fresh in your weekly meal prep, but you should eat it sooner so that it tastes the best. Store leftover strawberry broccoli salad in an airtight container and keep it in the refrigerator for up to three days.
Don’t freeze the salad. It won’t retain the same texture or flavor after it thaws again.
