This soup takes you on a trip around the world. It’s a fantastic way to boost your immune system, too. Both ginger and turmeric are known to have a lot of vitamin C and antioxidants in them.

Keto Zucchini Soup
Even if you don’t think you’re a huge fan of zucchini, make this soup. All the flavors stand out so much that the zucchini almost takes a back seat, with softer, muted flavors.
The cilantro is also optional. If you’re one of those people that thinks cilantro tastes like soap, replace it with fresh parsley. They are cousins and you can swap them easily.
Turmeric Soup
This recipe makes five servings, and there are just 4 grams net carbs in each serving. It’s the perfect thing to use in your meal prep this week.
Since I didn’t use any dairy in it, you can store it in the refrigerator for up to three days without the texture changing too much.
If you think you’re going to use it in your meal prep, I suggest using white or yellow onions. Red onions become super pungent when you store them in the fridge, even after you cook them.
Ginger Turmeric Soup
Together, ginger and turmeric are a show-stopping pair of spices! While you could totally dice or chop up a fresh ginger for this recipe, it’s a lot easier to use ginger paste.
Plus, the ginger paste is a lot easier to mix into the soup without biting into a spicy piece.
I only used 1/4 a cup of matchstick carrots in the entire soup. If you want to cut back on carbs a bit, you can leave them out. The soup will still taste incredible without them.
What To Eat With Soup
This soup isn’t very filling, so it’s best to serve it with something else. If you’re going to eat it for lunch, I suggest adding a type of keto-friendly flat bread.
Keto bacon jalapeno oopsie bread is spicy and savory and tastes delicious with this soup. If you want something that’s a little milder, make some keto rosemary cloud bread.
It resembles naan and tastes really good when you dip it into the soup. This soup is also the perfect way to start out your favorite Indian recipe.
Serve it with some keto chicken tikka masala. They have a lot of similar flavors. Ginger and turmeric soup also tastes perfect with the spicy-sweet flavors of keto coconut curry chicken.

Instructions:
Melt the butter in a pot over medium heat.
Stir in the onions, and saute until beginning to soften.
Add in the garlic, lemon juice, lime juice, zucchini, carrots, ginger paste, turmeric and salt and pepper to taste.
Pour in the chicken broth.
Mix in the green onions and cilantro.
Cover and simmer until the zucchini has softened.
Serve garnished with cilantro and lemon slices.
