Did you know that September is National Potato Month? Yeah, me neither! It seems that there’s a national month for just about everything nowadays, but National Potato Month is probably one of my favorites! There’s so much you can do with potatoes and sweet potatoes! We use them a lot in salads, with soups, and, when I have the time, I bake some chips. In honor of it, I decided this time to make our Cheesy Jalapeño & shrimp stuffed sweet potatoes! It’s a mouth-watering complete meal that is actually really easy to make and it’s perfect for a busy work week.
Ingredients:
2 pounds of shrimp
Sweet potatoes
2 jalapeño
2 large tomatoes
Olive oil
Salt & pepper
Garlic powder
2 tablespoons of butter
Shredded cheese **cheddar or a taco mix works great!
Instructions:
Poke sweet potaoes with fork and Lightly coat with olive oil and salt.
Bake for 45 minutes.
Remove shrimp tail and place in frying pan.
Add butter and let melt and then gradually add garlic and pepper. Sautee shrimp for about 2-3 minutes.
Split open sweet potaoes and fill with shrimp.
Top with shredded cheese of your choice (we used a shredded taco mix) and bake for a additional 5 minutes.
Top with jalapeño and tomatoes and enjoy!
Isn’t that easy? Serve it with a side salad, rice or some avocado. I intended to eat it with avocado (a must with almost every meal in our house), but unfortunately I couldn’t find one ripe enough to eat.
