Growing up I loved eating my moms chicken empanadas but because they were time consuming to make she would only make them during the holidays or on an occasional weekend. My mom would take a whole chicken, season it and bake it for an hour, sometimes even more depending on how many she’d be making. Up until a few months ago it was also how I made them but when I saw the Marketside Rotisserie Chicken at Walmart I immediatley knew that I could use it for the empanadas and eliminate the lengthier process of cooking a chicken and when I added the side of potato salad and a 2 liter Coca-Cola, I had a complete meal! You really can’t miss it, the signage at Walmart makes it easy for everyone to find what to make for dinner with little effort! Now, the empanada’s that were once saved for the holidays, can now be easily enjoyed on any night by adding the Walmart Rotisserie Chicken for only $4.98!
Below are step by step instructions on how to make the empanadas! It’s such a relief to know that on busy school nights, I can count on Walmart’s Rotisserie Chicken and of course a bottle of Coca-Cola to help me create an effortless meals that are convenient to purchase, help provide healthy, fresh options for dinner during back-to-school, and create a positive mealtime experience for me and my family!
Ingredients:
1 Rotisserie Chicken from Walmart
1 package of frozen discs
Canola oil
Directions:
Defrost disc.
Place chicken on cutting board and remove bones and skin.
Shred the Rotisserie chicken with a knife and fork.
Place one tablespoon of chicken in the center of a disc.
Fold disc in half and gently press fork along the edges to seal.
Preheat oil for about three minutes and then fry empanadas until golden brown on both sides.
Serve with a side of Walmart Marketside Classic Potato salad and an ice cold glass of Coca-Cola and you’ve got yourself a completely effortless meal!
