Layers of fresh mozzarella pearls, pepperoni, and olives create tangy and tasty keto antipasto skewers. They are perfect for lunch!
What Is Antipasto
In Italian, antipasto literally means “before the meal.” Antipasto is a way to describe Italian appetizers. Most antipasto recipes will include bite-sized portions of some combination of cured meats and cheese.
Antipasto plates are also usually self-serve. My antipasto skewers are pretty typical of antipasto recipes. They are individually portioned and easy for guests to grab and serve themselves.
Is Antipasto Keto
As long as the antipasto recipe is made with sugar-free dressing and sugar-free cured meat and cheese, then it will fit perfectly on the keto diet. My antipasto skewers are made without any kind of dressing.
Each skewer only has 2 grams net carbs! So munch on one or two. It won’t affect your macros all that much.
Keto Antipasto Kabobs
What is the difference between kabobs (kebabs) and skewers? Well, technically the skewer is the metal or wooden stick the meat and cheese goes on. Kabob is the name of the recipe.
Kabobs are usually grilled, and I wanted to keep the fact that mine are served raw apparent, so I renamed them. You can call them antipasto kabobs if you want.
What To Eat With Antipasto
Since these antipasto skewers are a finger-food, I like to serve them with other appetizer recipes. Together, this can either make for some fun party food or a really light and delicious lunch.
The salty and savory flavors in the skewers will taste perfect with some keto scallion pancakes. The pancakes have an earthy and salty flavor and are easy to pick up and eat without utensils. For more protein, eat these skewers with some keto BLT egg sliders.
They are super-fun to make and look adorable on your plate.
If you want to eat more fiber and veggies, then make some keto spinach balls. They are really high in healthy fats and iron – fantastic for anyone that struggles with anemia.
Keto Antipasto Skewers
Even though you could make them ahead of time, I suggest storing all the ingredients separately. They will stay fresh longer this way. If you want to make them for your meal prep, store the ingredients in separate compartments or containers and then arrange them on your skewers right before you eat.
Have fun with these skewers and use your favorite keto-friendly cured meats and types of cheese. If you don’t like black olives, leave them out. Add some chunks of Havarti cheese.
For more colors, add some cucumbers, green peppers, or marinated mushrooms.
