To make a keto blueberry sauce, you just boil some fresh blueberries with a tablespoon of lemon juice and ¼ cup water. The blueberries will wilt and release a nice, syrupy sauce. Add ¼ cup of swerve confectioner’s sugar to sweeten it.

If you want it to be a smoother sauce, you can puree this mixture in a blender.

Here’s how to freeze chaffles.

1. Let them cool off completely.
2. Lay them on a baking sheet in a single layer.
3. Freeze the chaffles on the baking sheet for about 2-3 hours, or until frozen solid.
4. Place the frozen chaffles in a zippered freezer bag.
5. Label the bag with the date. Chaffles last about 3 months in the freezer.

Almond flour
Blueberries

Instructions

Heat waffle maker.

In a bowl, combine all ingredients and mix well.


Using a non-stick spray, coat waffle maker before placing batter inside.
The batter will make 4 mini chaffles, you can use an ice cream scoop for measurement or about ¼ cup. Just make sure not to overfill the waffle maker.
When chaffles are done, add blueberries or toppings of choice.
