All of your favorite things about a classic Reuben sandwich are combined in this thick and creamy soup – minus the rye bread. The earthy chopped onion, bold garlic, tangy sauerkraut, peppery corned beef, and tart swiss cheese all come together in a thick and creamy broth.
It’s basically Heaven in a bowl.
If you need a recipe that you can throw together really quickly, then this is it! It only takes about 30 minutes for it to cook.
I don’t think it will make a very good slow cooker soup. You could try it – the worst that will happen is the corned beef becomes super tender and melts in your mouth. All the other ingredients can cook for quite a while in a slow cooker without any issues.
Creamy Reuben Soup Keto
As the heavy whipping cream and beef broth cook, it will make a really thick base for your soup. There is a way to make this soup without heavy whipping cream.
The best substitute for heavy whipping cream is a can of coconut milk. You only need 8 ounces of it – not the entire can. Using coconut milk might give the soup a slightly nutty aftertaste. If you use coconut milk, just use a little bit more sauerkraut and it will taste just fine.

1. Place the butter in a pot over medium heat on the stove.
2. Add the onion and celery to the pot and saute until becoming tender.
3. Place the minced garlic into the pot and saute another 30 seconds.
4. Pour the beef broth and heavy whipping cream into the pot. Stir to combine.

6. Cover the pot and simmer for 20 minutes.
