But I still love how they taste. So, I made a keto-friendly casserole that I can serve my entire family. The result is just as tasty as the deep-fried kind, but so much healthier and better for you.
Keto Crab Rangoon
Every single ingredient you add for this casserole will enhance the overall taste of this delicious dish. You can use canned crab, but fresh will taste so much better!
This is a dairy-heavy recipe. If you’re lactose intolerant, this might not work so great for you, because there isn’t a good way to replace the cream cheese. Cream cheese is what makes typical crab rangoons so good too, so I had to replicate it as closely as possible.
Keto Crab Casserole
Use this keto crab casserole throughout the week in your meal prep. The noodles and creamy crab sauce are perfect for lunch. All that healthy fat will keep you full until dinner time.
Store leftovers in an airtight container in the refrigerator for up to three days. The cream cheese mixture will solidify in the fridge. That’s ok, it will melt as soon as you heat it back up.
If you’re going to store it in your meal prep, I suggest adding some to your meal prep container without pork rinds on top. Then, add them to your casserole right before you eat.
If you keep it in the fridge with the pork rinds, they will soften and lose their crunchy deliciousness.

Ingredients:
Crab meat cut into pieces
Palmini lasagna noodles drained, rinsed and cut into thirds
Cream cheese softened
Green onions + additional for garnish
Minced garlic
Butter
Heavy whipping cream
Vegetable broth
Salt and pepper
Parmesan cheese grated
Crushed pork rind crumbs
Instructions:
Heat the oven to 350 degrees, and grease a small casserole dish well.
Add the butter to a saucepan over medium heat. Stir in the garlic, and saute for 30 seconds.
Mix in the cream cheese, and begin to melt, breaking it into pieces. Pour in the broth and heavy whipping cream.
Heat the mixture to a low boil, whisking to remove any lumps until the cream cheese has melted.
Add salt and pepper to taste, and simmer until the sauce has thickened.
Stir in the crab meat, palmini noodles and green onions.
Spread the mixture into the casserole dish.
In a bowl, mix together the Parmesan cheese and pork rinds.
Sprinkle the topping over the casserole.
Bake for 25 minutes.
Let rest for 10 minutes, and garnish with more chopped green onions before serving.

- 1 cup Heavy Whipping Cream
- 1/4 cup Vegetable Broth
- 1/4 cup Parmesan Cheese grated
- 1/2 cup Pork Rinds crushed into crumbs
