When you are craving tangy Asian flavors, skip the take-out and make this incredible salad instead. The colors pop beautifully – it’s a healthy summer salad that you will be proud to share at cookouts or pot-lucks. Plus, no one will be able to tell it is keto-friendly.
I love bringing low-carb food to a cookout because I know I’ll have something I can eat and everyone else loves it too.
Asian Salad Dressing Recipe Keto
The best thing about this salad is the sugar-free Asian salad dressing. I used a mixture of umami and nutty flavors from the soy sauce and sesame oil and slightly spicy ginger paste. Then, I cut those flavors with some rich Swerve brown sugar substitute.
The brown sugar substitute is completely optional. Mix all the other ingredients together first and taste it. I am so used to sweet and sour flavors that I wanted to add a deeper flavor note to the dressing.
Some people love the tangy dressing without the sweetener. Try it both ways and see what you like.
Save this dressing recipe because you can use it as a marinade for chicken breast or pork chops. It’s also a delicious keto-friendly dressing for egg roll in a bowl.
Keto Asian Chicken
There are two ways to make the chicken. The first way is the easiest (and it’s what I did). Just buy a rotisserie chicken from the store, shred it, and add it to your salad.
If you want the chicken to have more flavor, then marinate some boneless skinless chicken breasts in some of the keto Asian salad dressing.
Then, slice it and cook it on the stove. When it is fully cooked, chop or shred the chicken breasts and add them to your salad. Either chicken breast or chicken thighs will work. You can even use canned chicken if you are running short on time.
Keto Chopped Salad
This salad is the perfect way to break up meal-prep boredom. Have you ever made mason jar salads before? They are the best way to store salads for the rest of the week. Then, all you have to do is grab a mason jar and your lunch is ready!
Here’s how to store the keto Asian chopped salad in a mason jar. First, make the dressing. Then, pour a little bit of dressing in the bottom of the mason jar. Layer the cooked chicken on top of the dressing.
Place the green onions, red cabbage, and coleslaw mix on the very top. Seal it tightly with a lid and keep it in the refrigerator for 3-4 days.
The idea is that you place the wet ingredients on the bottom and the drier ingredients on the top. This keeps your lettuce and cabbage crispy. When you are ready to eat, either dump it all out on a plate and mix it up or mix it up in the mason jar.
What To Eat With Asian Salad
This is a very filling salad, so you don’t need to add much to the side with it. If you need to eat more protein, make some keto Chinese boneless spare ribs. They are tangy and super-tasty.
Keto dan dan noodles are slightly spicy and a fantastic source of fiber. If you like to eat a soup and salad together, then make some keto egg drop soup with it.
