This keto crockpot chicken chili has a cream cheese broth that’s seasoned with ranch and topped with bacon and kale. It’s a one-step slow cooker soup with only 4g net carbs per serving.

All of the flavors in this thick and creamy soup are as familiar as your favorite song. Each note brings back a happy memory. That’s why I think soup is one of the best types of comfort food you can make. Every spoonful overflows with a savory delight. 

Make Your Own Ranch Seasoning 

The ranch seasoning packet you can buy at the store has a tiny bit of modified corn starch in it. If you want to be strict with your low-carb diet, you can make your own ranch seasoning mix. This recipe from The Pioneer Woman is perfect!

White Chicken Chili Crock Pot 

I love creating “dump and cook” crock pot recipes – and this is definitely as easy as just putting all the ingredients in the slow cooker and tapping the “cook” button.

As it cooks on low all day, your kitchen and home will be filled with the mouthwatering aromas of chicken, and salty ranch seasoning. 

By the way, if you haven’t tried to make a chili with ranch seasoning before, you have to now! There is nothing quite like it.

This chili is fantastic for meal prep. Store it in an airtight container in the refrigerator for up to 3 days. When you are ready to eat it, the cream cheese broth might solidify a bit.

If that happens, just warm it up on the stove or in your microwave. It will melt and mix back in with the rest of the ingredients. 

Another time-saving trick that I love to do with this chili is to shred up and use rotisserie chicken. In fact, you can make this recipe on the stove as a last-minute recipe that can cook in less than 30 minutes!

Keto Crockpot Chicken Chili

Just put everything in a dutch oven or large pot, add some shredded rotisserie chicken, and let it heat up to a low boil. Dinner is ready! 

I also like to bake a huge batch of bacon in the oven and store it in the refrigerator all week. The crumbled bacon on top is perfect in this chili! You can also use cooked bacon for keto chicken bacon ranch pizza or keto bacon egg and cheese chaffles.

If you follow my recipe exactly, it’s a mild-tasting soup that is the perfect family-friendly dinner. In fact, I like to add some garlic cheddar biscuits on the side. They are low in carbs and my kids love them too!

It’s really easy to give this soup a little kick! Just add some sliced jalapenos or even diced habanero peppers to it. 

Low-Carb White Chicken Chili 

You might notice that I used a leafy green veggie in this chili too. That’s kale. When you allow the kale to wilt and cook with the rest of the ingredients, it doesn’t have as bitter of a taste.

Kale is known as a superfood because it has so many antioxidants and is a fantastic source of iron. Even if you don’t like the taste of kale, use it in this recipe – you hardly taste it.

Ingredients:

Boneless skinless chicken breasts
Cream cheese
Medium onion 
Minced garlic
Packet Ranch seasoning mix
Chicken broth
Chopped bacon 
Fresh kale 

Instructions:

1. Layer the chicken in the bottom of the Crockpot.

2. Cut the cream cheese into pieces and place around the chicken.

3. Add the onions and minced garlic to the Crockpot.

4. Sprinkle the mixture with the Ranch seasoning.

5. Pour in the chicken broth.

6. Cook on low for 6 hours. 

7. Remove the chicken and shred it on a plate. 
8. Whisk together the ingredients still in the Crockpot until well combined.

9. Add the bacon pieces and the shredded chicken to the Crockpot.

10. Mix in the kale, place the lid on the Crockpot, and let sit until the kale has wilted.

  • 1/2 medium Onion chopped
  • 2 tsp Garlic minced
  • 1 packet Ranch Seasoning Mix
  • 4 cups Chicken Broth
  • 1 cup Chopped Bacon
  • 4 cups Chopped Fresh Kale ribs removed

Instructions
