Mississippi pot roast is a recipe that Robin Chapman created in the early 2000s. The original recipe isn’t keto-friendly, so I had to adapt it. Originally, it involved au jus gravy, ranch seasoning, butter, pepperoncini peppers, and beef roast.
The story about how this roast became a viral sensation is actually pretty fascinating. Robin Chapman isn’t even a blogger. She just created this recipe as an adaptation of a family recipe that was passed down to her. The entire story of the Mississippi pot roast was featured on the New York Times and on national shows like Good Morning America.

The original recipe was a slow cooker recipe, so I kept true to that. I love how my house smells as it cooks all day. It really gets you hungry for dinner.
I love how easy this is! You literally just add all the ingredients to your slow cooker and then turn it on and let it cook. No other steps necessary!
What Do You Need To Make Mississippi Pot Roast?
In order to make it keto-friendly, I did not use au jus gravy, since it is made with flour and increases how many carbs it will have.
Instead of au just gravy, I used beef bullion base, beef broth, onion, and garlic. The taste is the same but without the carbs. I still used ranch seasoning mix, because it normally doesn’t have carbs in it.
Another difference between my low-carb version and the original recipe is the butter. The original recipe calls for a stick of butter. I didn’t use any butter because the bullion base did what the butter does, so I didn’t see the need. You can definitely use it if you want to though. Butter is keto-friendly.

This is the best version of Mississippi pot roast that you will ever find. I love that all the spices melt together in the slow cooker. It’s not very spicy and it melts in your mouth.
In fact, this is a popular recipe among kids too! My kids ask for it over and over each month.
What To Serve With Mississippi Pot Roast
My favorite low-carb recipes to serve on the side with keto Mississippi pot roast is garlic butter cauliflower mashed potatoes. Place the roast on top of the cauliflower mash and layer it with the gravy. Yum!
Other things to serve with it include bacon-wrapped asparagus, garlic butter cauliflower rice, and keto garlic knots. Use the garlic knots to make a low-carb sandwich.

There are a few different ways you can serve this as a meal. If your family isn’t on the keto diet, serve it with some roasted potatoes or on top of some buns. You can also use it on top of mashed potatoes for them and mashed cauliflower for you.

This is really easy to make ahead and save in your freezer. Let it cool off completely. Then, shred the roast. Next, place it in a freezer-safe container or inside a freezer plastic zippered bag.
It will stay fresh in the freezer for up to 6 months.

1. Season the roast with salt and pepper, and place it into the bottom of the Crockpot along with the onions and pepperoncini peppers.
2. In a bowl, whisk together the beef broth, bouillon base, ranch seasoning mix and minced garlic.
3. Pour the mixture over the roast and onions.
4. Place the lid on the Crockpot, and cook on low for 7-8 hours.
5. Shred the beef and serve.

- 3 tsp Beef Bouillon Base
- 6 Pepperoncini Peppers
- 1 cup Beef Broth
- 1/2 Medium Onion Cut into slices

Instructions
