Low-Carb Spaghetti Noodles
In order to enjoy spaghetti with my family, I decided to make veggie noodles. One of the most popular keto noodle replacements is zoodles – or zucchini noodles.
In this recipe, I used a spiralizer and cut out my own zoodles at home. If you don’t have time (or don’t have a spiralizer) you can always just buy frozen zoodles. It’s so much easier!
If you buy frozen, you’ll have to adjust the cooking time slightly. Just defrost the noodles in the microwave, use a paper towel to remove as much moisture as possible, and then just cook them on low for an hour or less.
How To Cut Zoodles Without A Spiralizer
If you don’t have a spiralizer, don’t fret! You can also use a sharp knife to make long, thin slices along with your zucchini, no more than 1⁄4 inch wide. You don’t have to have any fancy kitchenware to ensure a good result- this process takes only a few minutes!
Low-Carb Meat Sauce For Spaghetti
If you are going to buy marinara sauce from the store, watch out for hidden sugars. This is why I prefer to make my own meat sauce.
In fact, these zucchini noodles, when tossed with a low carb meat sauce, will satisfy your cravings without breaking ketosis. The meat sauce used requires only healthy pantry staples such as a frozen protein, canned tomato, and Italian spices for flavor.
The Best Sweetener for Meat Sauce
While being vitamin-rich, tomatoes already contain a healthy amount of natural sugar. A keto-friendly sauce for zoodles calls for stevia extract, but you may use whatever sweetener you prefer or skip on it. I prefer to use Swerve because I like how it tastes.

Ground chuck or ground beef is an excellent source of fat for this dish, however, it can be easily replaced with chicken or turkey for a hearty substitution.

Tackling a busy schedule like myself? Just love the idea of meal-prep? Make it a freezer meal by cooking in slow cooker, allowing to cool and then placing in a freezer bag.
Mark the date, it is good for 3 months. To reheat simply thaw for 12-24 hours and then place in a slow cooker for 3-5 hours.
Plus, zoodles on their own can be stored in the freezer for up to a year, so you can remake these low carb spaghetti zoodles again and again if you wish.

Directions:
