Soy sauce eggs are basically hard-boiled eggs that are marinated in a sweet soy sauce marinade. People use them in their salads, soup, and on top of stir fry (like this one).
Ramen eggs are also soaked in a sweet soy sauce marinade. The biggest difference is that they are usually soft-boiled. People cut them in half and eat them in their ramen soup. The yolk is usually so soft that it falls into their soup.
If you prefer hard-boiled eggs in a stir fry, you probably want soy sauce eggs.
How To Make Soy Sauce Eggs
Soy sauce eggs are a really delicious way to use hard-boiled eggs. As part of my meal prep for the week, I will often hard boil a dozen eggs and then use them throughout the week.
To make the eggs, hard-boil them and then peel them. Then, place them in an airtight container or resealable food storage bag along with the ingredients for the marinade. Let the eggs soak in the refrigerator for about 2 hours (or longer if you can).

This bok choy stir fry will taste amazing with some keto cauliflower fried rice.
There are lots of ways you can cook this unique vegetable. You can slice it in half and roast it in the oven. I like to cook it and then use it in my keto ramen soup.
Chances are that if you search for keto bok choy recipes, almost all of them are going to be a stir fry recipe. This veggie tastes the best when you sear it and fry it with some soy sauce.
Bok Choy Substitute
Bok choy is really good for you. It’s high in iron and fiber – which is really important on the keto diet. If you can’t find it or don’t have it, you can use a few different veggies in its place.
The best bok choy substitute in stir fry is either leek or broccoli. You can also use Napa cabbage or swiss chard instead of bok choy.

Soy Sauce Eggs
Hard-Boiled Eggs
Soy Sauce
Rice Vinegar
Swerve Brown Sugar Substitute
Water
Bok Choy Stir Fry
Baby Bok Choy
Olive Oil
Sesame Oil
Soy Sauce
Rice Cooking Wine
Minced Garlic
Ginger Paste
Swerve Brown Sugar Substitute
Instructions:
Place the hard-boiled eggs into an airtight container with ⅓ cup soy sauce, 1 Tbsp rice vinegar, ½ tbsp Swerve brown sugar substitute and 3 Tbsp water.
Stir to combine, and then marinate in the fridge for at least two hours, shaking the container slightly to coat the eggs well every 30 minutes or so.
Heat the olive oil and sesame oil in a skillet over medium heat on the stove.
Remove the outer large leaves from each baby bok choy until just a small center cluster is remaining. Place the loose leaves and bok choy centers into the heated skillet.
Sear the bok choy on both sides slightly, and then reduce the heat to medium-low and cover. Cook for 5 minutes turning if needed to prevent burning.
In a bowl, combine 1 Tbsp. soy sauce, ½ Tbsp rice cooking wine, 2 tsp minced garlic, 1 tsp ginger paste and ½ tsp Swerve brown sugar substitute.
Pour the sauce mixture over the bok choy in the skillet and saute until 5-6 minutes.
Sprinkle the bok choy with sesame seeds and green onions for garnish if desired.
Slice the soy sauce eggs in half, and serve with the bok choy.
