I like to keep a few things in my pantry that I know I can use to make a few different recipes: cans of tuna, cans of Palmini pasta, and my favorite spices like garlic and lemon juice. There are so many things you can make with some keto-friendly pasta and canned tuna.
For this one, I decided to make a zesty lemon and tuna pasta recipe. It’s a mild-tasting recipe that is popular with kids and anyone that doesn’t like anything that is too spicy.
Palmini Noodle Recipes
Palmini noodles are some of the most versatile keto-friendly noodles you will find. They are canned, so you don’t have to wait for them to cook – and they have a long shelf life too!
They are delightfully low in carbs because they are made from hearts of palm, so they are incredibly high in fiber.
I’ve used these noodles in other recipes before. Some of my favorite ones are keto tomato cream sauce pasta and low-carb garlic and bacon pasta. I’ve also used them to make easy keto shrimp scampi and creamy keto lasagna soup. These noodles are super versatile. The best way to stay within your budget is to use ingredients you already have in your pantry. That’s how this recipe came about. It is very budget-friendly because it uses mostly canned and refrigerated staples that I already had on hand.
If you wanted to add a few more ingredients, you could mix in some canned vegetables that you have too. In order to keep it low in carbs, I suggest using canned asparagus, green beans, or some canned peas.

This recipe is perfect for lunch, dinner! You can even store it in the refrigerator and enjoy it cold. If you want to elevate it even more, add any of these optional toppings: bacon, jalapenos, broccoli, or spinach.

Keto tuna pasta is one of my favorite meal prep ideas because it tastes delicious both warm or cold. Store it in an airtight food prep container. It will stay fresh in the refrigerator for up to 5 days.

There are lots of different things you can serve with this pasta. It’s basically a complete meal all on its own. I like to enjoy it with some keto garlic drop biscuits or some keto garlic toast. It’s surprising but all of these things are low in carbs and will keep you within your macros.

Ingredients:
Palmini Linguini
Canned Tuna
Olive Oil
Minced Garlic
Lemon Juice
Parmesan Cheese
Pepper
Instructions:
Open and drain canned tuna and palmini noodles. Set both aside, for now.
Zest 1 lemon, set aside.
In a large skillet, heat olive oil over medium heat.
Add minced garlic, saute until fragrant.
Add tuna and lemon juice. Continue to cook for another 2 minutes.
Stir in Palmini noodles. Cook until noodles are heated through, then add ¼ cup Parmesan cheese, salt and pepper.
Remove from heat. Garnish with additional parmesan cheese, fresh parsley and lemon zest.
