Egg Salad With Dill
This is another really easy and delicious egg salad recipe that turns eggs into a filling and refreshing lunch. The best thing about this recipe is how quick and easy it is. I like to keep a few hard-boiled eggs in my fridge so that I can use them in recipes like this one.
The fresh dill is what gives this salad its unmistakable flavor. As you bite into it, you’ll think you are at a family picnic, sitting in the warm sunshine.
Ways To Use Pickles
I don’t know about you, but sometimes I’ll buy a bunch of pickles, hoping I’ll eat them as a low-carb snack. Thankfully, there are recipes like this one that I can make to eat them up.
I’ve been known to create fun recipes with pickles since they are such a delicious and low-carb food. I made dill pickle chips before and this easy ham and pickle dip.
Out of all of them, this egg salad is perhaps one of my favorites. I can easily eat this for lunch. I just place it in a large lettuce wrap and lunch is served.
You could also stuff this salad in a green or yellow bell pepper. Peppers make delicious salad bowls that you can eat along with your salad.
Low-Carb Egg Salad With Bacon
Another thing I love about this egg salad is the bacon! When you buy bacon on a keto diet, always buy the kind that doesn’t have any added sugar. That means to avoid any that say “maple-cured.”
One way to make preparing this salad a lot faster is to fry up a bunch of bacon all at once and then keep it in your refrigerator. Then, you just have to crumble up the cooked bacon and add it to your salad. It’s so easy!

Egg salads are some of my favorite low-carb lunch ideas of all time. I like them because they are delicious ways to use up eggs. Eggs are a high-protein and low-carb food that you can enjoy for just about any meal.

INGREDIENTS:
Eggs
Mayo
Dijon mustard
Fresh dill
Dill pickles
Salt & pepper
Bacon
Green onions
INSTRUCTIONS:
In a small bowl, whisk together mayo, dijon and 1 tsp of fresh dill. Set aside.
Peel and chop the hard boiled eggs. Place in a large bowl.
Add chopped pickles, green onions, and mayo mixture. Mix well.
Top with crumbled bacon, dash of salt & pepper, and remaining 1 tsp of fresh dill.
