Jalapeno poppers are some of my favorite snacks of all time. I love the spice and creamy filling. There are so many ways that you can take a basic jalapeno popper and make a bunch of different foods and snacks.
I still enjoy making jalapeno popper chicken salad for lunch. If I’m making dinner for my family, I might serve some jalapeno popper green bean casserole with it. The options are endless.
Keto Roll-Ups
Any time that you make a roll-up snack, it’s perfect for parties. You can just put little toothpicks in them and set them out on a tray. These are perfect for parties too. Set them out and you know there will be something at the party that you can snack on without guilt.
You can also just make a bunch for you and your kiddos. They are kid-friendly and make a low-carb snack that you won’t feel bad about eating when you are counting your carbs.
Trust me – dip them into some ranch dressing or add a bit of hot sauce! It really makes them taste even more amazing! ]
Keto Cream Cheese Taquitos
There are only 2g net carbs in each taquito! Enjoy a few of them for lunch or for an after-dinner snack.
One of my favorite foods before going on the keto diet was fried taquitos. This is a low-carb way to enjoy a taquito. Instead of wrapping the cream cheese and chicken up in a fried tortilla, I made a wrap out of shredded cheddar cheese. You won’t believe how amazing it tastes!
You can also add some bacon on the inside. If you think it is too spicy, just omit the jalapenos – but they are my favorite thing about them. Maybe just cut back on how many you put in.
How To Store Leftover Cheese-Wrapped Taquitos
The only downside to using shredded cheese as a wrap is that they don’t last very long in the refrigerator. Eat them fresh for the best taste and experience. Save the filling in an airtight container so you can make the cheddar cheese wraps separately if you have any leftover filling.
The filling will last about a week in the refrigerator.

Jalapeno diced finely
Cream cheese softened
Sour cream
Green onions chopped

Instructions:
Preheat the oven to 375 degrees.
Make 8 even circles with the shredded cheese on a large parchment lined baking sheet.
Bake for 10-12 minutes until the edges are browned.
In a bowl, combine the remaining ingredients and mix thoroughly.
Place a row of the filling down the center of each cooked cheese circle and gently fold the cheese up around it. Let the rollups sit to harden and then serve.
