This spicy egg salad is made with cheddar cheese, mayo, and fresh jalapeno! Only 2g net carbs per serving, it’s a perfect lunch!

There are so many different ways to make egg salad. I’ve seen recipes that use cream cheese, egg salad with cottage cheese – I’ve even seen egg salad without any mayo!

For me, I like to keep things simple and classic. I think that my combination of mayo, sour cream, and cheddar cheese, is just perfect. The sour cream gives it the perfect amount of tanginess so that it brings out the spicy from the jalapenos. 

I also added some yellow mustard too! You have to try this egg salad – it is one of my favorite lunch recipes. 

Egg Salad Lunch Ideas

Egg salad is an incredibly simple lunch idea that you can serve in a ton of different ways. If I’m really busy, I’ll just eat it with a fork as it is. I also like to add some of it to a large piece of lettuce and enjoy a crunchy lettuce wrap.

If I have a little extra time, I’ll make some ket0-friendly bread and have a low-carb sandwich. 

There are also a lot of ways to make egg salad too. My Ceasar Egg Salad is my 2nd favorite version, after this one.

Eggs are one of the best types of food that you can eat on a low-carb diet. They are really high in protein and low in carbs. In fact, they are an excellent way to eat protein when you don’t want to eat meat.

Egg salad saves really well and there are a bunch of different ways you can make it. In addition to egg salad, you can also make bacon and egg casserole for breakfast or keto chicken egg foo young for dinner.

How To Store Egg Salad 

This egg salad is fantastic for meal prep. Store it in an airtight container in the refrigerator for up to 3 days. It will stay fresh all three days.

Ingredients:
 
Eggs
Jalapenos
Green onion
Finely shredded cheddar cheese
Mayonnaise
Sour cream
Cumin
Yellow mustard
Salt and pepper 
 
Instructions:
 
1. Add the eggs, jalapeno pepper, green onions and cheese to a mixing bowl and toss to combine.

2. In a bowl, whisk together the mayonnaise, sour cream, cumin, mustard and salt and pepper to taste.

3. Mix the sauce in with the egg mixture until well combined.

Ingredients
  

  • 6 Eggs Hard-Boiled and chopped
  • 1 Jalapeno Pepper Chopped and seeds removed
  • 1/4 cup Green Onions chopped
  • 1/2 cup Cheddar Cheese finely shredded
  • 3 tbsp Mayonnaise
  • 2 tbsp Sour Cream
  • 1/4 tsp Cumin
  • 1/2 tsp Yellow Mustard

Instructions
 

  • Add the eggs, jalapeno pepper, green onions and cheese to a mixing bowl and toss to combine.
  • In a bowl, whisk together the mayonnaise, sour cream, cumin, mustard and salt and pepper to taste.
  • Mix the sauce in with the egg mixture until well combined.
  • Serve on lettuce wraps or your choice of keto breads.
